If one wants to visit De Dolle from Bruges using public transportation, you'll probably end up in Diksmuide for a spell. If "Trenches of Death" and monuments to Flemish Nationalism aren't your thing, there are plenty of taverns on the city square. The Brouwershuys has the best beer selection of those I visited.
We entered in the late morning and as such had the place to our selves. The bar keep was friendly and happy to chat with us. Seven average taps and about 60 bottles were available. A few gems could be found among them including plenty from de Dolle, and the Rodenbach Vin de Ceria, which I ordered. The barkeep, who seemed used to British tourists seeking crap lagers, advised me against it so I informed him that I was actually an American and that surprisingly, we do like sour beer in the states. He brought the beer over with a smile and I loved it. My wife and in-laws drank beers from Orval and De Dolle.
The atmosphere was classic modern but with a slight club vibe and I could imagine the Brouwershuys becoming a rather lively dance club each evening. The music, even during the day, was house or ambient techno stuff. Overall, a great place to prepare for De Dolle, which was and remains the single best beer experience of my life.
Oh, and unlike all of the other bars I visited in Diksmuide, I didn't run into any skinheads or pit bulls at the Brouwershuys. Although... I should note that all of the skinheads and pit bulls that I came across in Diksmuide were surprisingly jovial and kind.
