Poured from the 750ml caged and corked bottle into a standard pint glass. Beer is obviously vintage aged 4 years due to the 2004 distinction.
Appearance- Beer pours with a three finger head of foam, a dirty amber colour with a thick amount of yeast in the pour. Head is an off cream that refuses to die down. Big bubbles of foam that reside in the glass for a good solid five minutes.
Smell- Bubblegum and Belgian yeasts with a solid yeasty phenol in the finish. Pink bubblegum. Bazooka Joe predominates, and smell dies to blood orange and candi sugars.
Taste- Bubblegum, Unibroue signature yeast, slight phenolics. Beer is smooth and balanced. Sweet and flavorful. Cidery and drinkable.
Mouthfeel- Smooth, medium bodied, easy drinking, well carbonated, slightly astringent, and moderately warming.
Drinkability- Very nice but still slightly astringent. Big bubblegum but enjoyable. Alcohol is not detectable at all.
Incidentally, we left this out as the last beer of the night, when we woke up, we regretted leaving it out as all the carbonation was gone, but soon after rejoiced as we made some of the best beer batter of all time with the leftover beer. Onion rings and deep fried pickles. Probably one of the rarest beer batters ever made.

750ml bottle cellared on it's side.
Pours cloudy amber with barely a trace of head and zero retention. Cloves, apple, and raisins in the nose. Medium bodied with a slickish mouthfeel. Sweet malt with shades of raisins and spice. Finishes with fading raisins and spice.
Not terrible for a beer almost 15 years old but it was never exceptional when it was young.

Bottle shared by Todd last night.
Slightly hazy copper brown color with a smallish head that dissipates quickly. The aroma is filled with overpowering spices atop a faint brown sugary caramel malt base. The flavor is not a bit different. Medium to thick body with a light to moderate level of carbonation and a sweet spicy mouthfeel. Not bad for a ten year old beer, but too heavy on the spicing for my tastes.

Sample: 1 bottle 2004
A: Burnt orange in color, cloudy throughout, pours with no head, no lacing, no internal carbonation, certainly a few years peaked
S: Moderately fragrant with a rather fruity aroma, apple juice comes to mind, some pepper and herbal elements exist as well, quite yeasty
T: Flavor is incredibly subdued, fruity and yeasty, but missing something, very slight alcohol but almost not even present, definitely a shell of what this ale used to be
M: Like drinking juice, amazingly drinkable, like water on the palate, extremely mild fruity aftertaste, not lingering or drying
O: Unfortunately this beer has seen better days and peaked a couple years ago, but an interesting experience needless to say, unbeatable mouthfeel given it abv

Thanks to jjfoodie for sharing this bottle. The beer pours a yellow color with a white head. The aroma is heavy on the Belgian yeast, with some wheat and assorted spices thrown in. The flavor is similar, with a strong yeast component. I also get some nice pepper and spice notes, as well as some floral and rose notes. All of this is mixed in with some biscuit and wheat notes, as well as a good dose of alcohol, Medium mouthfeel and medium carbonation.
