Noire de Chambly opens to a nose that anyone familiar with Unibroue will be familiar with, featuring their funky, spicy yeast strain that lends a mulled apple cider note with threads of apple cider vinegar. In addition, there are apple, orange, berry, and cherry fruit esters, as well as what seems to be a faint haze of cigarette smoke, like stepping into a nightclub in the middle of the day. These mix with an undercurrent of brown bread, toast crust, biscuit, and floury baguette. A peppery spiciness overlays everything in typical Unibroue fashion. As a whole, the beer is nice, but seems to be lacking some of the depth and complexity associated with Unibroue beers. The light 6.2% ABV is likely the cause of much of this, robbing the beer of sugars, so that the proprietary yeast supply quite a large portion of the aroma.
On the tongue, the beer is immediately peppery and spicy, the typical Unibroue yeast notes of spiced cider and vinegar joined by scads of white and black pepper, burning the tongue. Apple, cherry, berry, and orange fruit esters bring fruity relief, as do thin bits of brown sugar. Brown bread, floury baguette, and biscuit add earthiness. The spice notes, however, take center stage, bringing not only pepper, but harsh whole-stick cinnamon and bits of cardamom and nutmeg—so if this is spiced cider, it’s overly-spiced cider. The aftertaste is heavily spiced, following the main mouthful, but even more so as the sugars die off, and lingers on the tongue for a long time. Mouthfeel is medium-light to medium, and carbonation is medium-high, approaching champagne, and causing the better portion of the mouthful to turn into foam.
As a whole, this is certainly decent beer, but when considered against the rest of Unibroue’s lineup, ends up being somewhat of a disappointment. The spicy, yeasty notes are simply overpowering here, causing the rest of the beer to be rather lost, and the heavy carbonation ends up marring the mouthfeel with foaminess. Decent, but could have used a bit more sugar, and a lot less CO2.

Purchased at the LCBO for around $7.00 for a 750ml bottle. Less than 6mths old. Want to try one fresh and others later....
A- Excellent! Very dark. Opened hard with a TON of brown head.... 3" in a chalice. Head dissipates over 3 to 4mins to a nice film.
S- Excellent hops and malt. Caramel hints. coriander so I know this is a blend with Blanch De Chambly.
T- Yup! Wheat dark ale 100%. Very nice blend of recipes to come up with a winner. All around great beer. Airy and light despite the colour. Touch metallic though.
M- Very good. Very carbonated. Needs a bit of time to blend the flavors of dark ale and wheat beer.
O- Excellent! Will try again next year to see how it aged.
This very young, very carbonated beer surprisingly goes well with... Sushi!!!
For some reason this one went very, very well with sushi. Even with the light fish flavor it still does not overpower.

Noire De Chambly isn't quite black ("noire") but it sure is dark; there may be a flicker of colour to the light but I have to stress *maybe* (in the sense that maybe others will see some but I don't). That being said, there's no mistaking this for a stout, if for no other reason than its tall, foamy, distinctly Belgian-esque head.
Unibroue has such a distinctive yeast that it's typically easy to distinguish their beers by smell alone. This beer's bouquet, however, has a slightly different profile: more spicy and, as the name suggests, appreciably 'dark'. It's got black licorice, cocoa powder and so much clove, ginger and anise that I don't know whether to drink it or bake with it.
The taste is relatively mild thanks to a lightly sweet and gently toasted maltiness, but vivid notes of star anise, perfumed clove and fresh-zested ginger continue on the palate and the full extent of their spiciness is felt with a little sting on the finish of each sip. It drinks kind of like a strongly-steeped chai tea (albeit with bold yeast and alcohol overtones).
Despite the sting of spices and bubbles, the mouthfeel falls a little flat. There is nowhere near the depth or richness of malt to induce chocolate or caramel notes - heck, there's hardly enough to evoke raisins even - and, as result, the alcohol overpowers (even at a reasonable 6.2%). The clove, anise and ginger notes go almost unchallenged.
Unibroue is arguably one of the best brewers of Belgian ales outside of Belgium but Noire de Chambly - unlike most of their offerings - doesn't quite live up to the Old-World ales it's been modeled after. It's not a bad recipe by any means, but the monks and time-honed brewers of Walloonia and Flanders make much more graceful and complex ales than this.
