I poured this 12 oz. bottle into a Chimay chalice. Best by February 2, 2013.
A: cloudy honey gold color, the white head quickly falls into a fine Belgian-style cap with good lacing.
S: banana, plenty of Belgian fruity esters, apricot, clove, spice, the malt aroma alternates between bread and cracker-like, the hop note is floral (honeysuckle?).
T: there is an explosion of ripe and overripe fruit up front, including banana, apple, apricot, and grape, the middle is rich, spicy, and has a vanilla/oak core, the finish is long, luxurious, and spicy/earthy. This is exactly how a Belgian Tripel should taste.
M: medium-bodied, ultra-silky texture (imagine the bed linens at a 5-star hotel), and moderate to plentiful carbonation with a pleasant dry finish.
O: a fabulous rendition of the Belgian Tripel, and one that I will definitely seek out again.
