I knew I would like this beer. It's been in my cellar (closet) for months. I kept denying myself the pleasure for some reason. My shrink says I do that a lot. Opening the bottle was not an easy task; I ended up using a corkscrew. It poured beautifully from the 750 ml bottle into a Sierra Nevada pint glass. It's a beautiful hazy golden color with a foamy head that disappeared a little faster than I would have preferrered with little lacing to speak of. Next time I'll go for a more aggressive pour as in the Unibroue video on their website.
But oh the smell is spectacular! Fruity, rich and malty with some booze. The taste is more restrained with the booze, which is a good thing for me, but the fruity yeast, and rich malty flavors are far beyond my greatest expectations for this fantastic tripel. This is definitely a sipping beer, and as it warms the flavors are getting more pronounced. I'm in love! How do they hide 9% ABV?!?!
The mouthfeel is medium, which is surprising with all the malts that probably go into this ale. Its downfall is it's too drinkable for an ale with 9% ABV. :-)
Next to Duvel this may be my favorite beer I've ever tasted. Sorry for gushing beer vets, but I feel like I've crossed some kind of threshold of flavor that I didn't know was possible for a beer.
