12oz bottle poured into a tulip. Best before date 3/7/14
A: White two finger head with good retention that leaves a cap throughout. Body is a slightly hazy golden straw. Lacing is present and it follows the beer down the glass.
S: Bursting with aroma. I could smell it long before I put it under my nose. Heavy clove, less heavy coriander, bready yeast, biscuit and grain, pepper, light fruit, lemon and orange peel.
T: Tremendous balance...the many flavors really meld together. It’s is so unified that it makes it a challenge to dissect the flavors. The yeast, clove, pepper and coriander are there. Also, lemon, orange peel and grain. Starts a little sweet but finishes dry, featuring a warming alcohol sensation.
M: Very dry and tingly. Body is medium-light. Carbonation is high and cuts some of the dryness and adds to the enjoyment.
O: I kept finding scents and flavors in La Fin Du Monde. The dryness keeps it from being my favorite tripel, but I can’t deny that it is a wonderfully complex and well designed beer.

Poured ~50 degrees F into a weissen glass. Left about an inch in the bottom of the bottle, swirled it, then tipped in the lees.
A - the first one I poured had a perfect 2-3 finger head, the second one I poured looked like it was going to be OK, but then the head went crazy and towered over the glass by about an inch. It never spilled over though. The head was a light off white color, and very dense and frothy, like a freshly whipped meringue. The one that went crazy took a long time to settle down. The beer itself is a cloudy gold. I can barely discern what seems like a perfect amount of carbonation through the haze.
S - Not as much on the nose as I would like from a tripel, but I'm happy with what's there. A whiff of something fruity, like some vague citrus up front, but then I'm picking up mostly on baking spices. There's also a subtle hint of some barnyard tang and a quite noticeable dusty quality.
T - Drinks a bit like a kabinett riesling with notes of white grape and pear, the baking spice offered by the nose comes through. There's a little bit of bretty tang. The alcohol is well disguised.
M - Well integrated flavors, medium body, perfect amount of carbonation. Quick, dry finish. Quite like the mouthfeel on this one.
One of my favorite tripels. I'm drinking this one in lieu of champagne to celebrate a special occasion right now.

A: If a golden trophy could swirl hazily, it would look like this beer. Lots of lacing.
S: The scent of bananas is most prominent. Then dates, soft lemon, almond, and little hints of sweet caramel.
T: The taste introduces itself unassumingly, with your standard blonde elements (light, spritely, fizzy), and waits a moment to unfold its more complex elements. The banana's there, along with the sweetness. There's a comforting oaty tinge to the way it goes down. It's got all the flavor diversity of a darker Belgian ale, but with an embracing lightness. Deep and warm, lulling and celebratory. A delicious and enriching beer.
M: Excellent. Lingering and complex, without leaving a cloying sweetness in your mouth. The alcohol presents itself and compliments the banana nicely, leaving a slightly acidic feel (in a good way).
O: I'm used to pretty one or two dimensional blonde ales, so it was a real pleasure to have one of such rewarding complexity. My personal favorite from Unibroue is La Terrible, but this one is definitely up there. It's perfect for a night where you crave a well crafted beer, but don't want to down something thick, filling, or hop-heavy.
