A: Pours a hazy golden yellow, cloudy from the yeast (I prefer to add the yeast). Head retention is very good, starting out with nearly two fingers of head and retaining fairly thick white cap throughout the entire beer. Good lacing as well.
S: There's a lot going on here, but it all blends very well together to create an amazing nose. Coriander and Belgian spices up front followed by sweet fruit aromas--white grapes, pears, and bananas. Backing it all up is the Belgian yeasty aroma.
T: Similar to the aroma, there's a lot going on. Spices up first followed by sweet pears and white grapes. The finish has a chalky yeast flavor that pleasantly lingers in the mouth along with a very light alcohol burn.
M: To me, the mouthfeel in a Belgian beer is very important. There should be a light crispness to it that conceals its high gravity nature. Many attempts at Belgian beers fail to get this characteristic, but this beer nails it head-on. Light body, but with high carbonation that really provides a bite to go with the sweet fruit and yeast flavors.
D: With such a great taste and mouthfeel, this beer is dangerously drinkable. Very light and crisp yet bursting with flavor. With the alcohol hidden well, it becomes very refreshing.
Overall, this is close to, if not the best trippel out there. Very, very good beer.
