Cloudy dark-yellow out of the bottle into a goblet. A luscious and creamy white fluff swells and settles into an even, perfect looking half cm covering. This is one noble-looking beer with its steady stream of champagne-like bubbles lustering away in the goblet by the window.

Smells like soft apples, cloves, warm rising bread, and then the banana. The nose builds as the beer warms, lingers and disappears from the glass.

Taste is baked apples, croissant-like buttery bread, soft alcohol. It has a crisp resonance on the tongue from the carbonation that I think is truly awesome in the way it balances out both the beer’s pillowy softeness and alcohol content. La Fin Du Monde’s tasty characteristics certainly place it ahead of the pack. I tried a Green Flash tripel last week on tap and it was good; this is much better.

A - This beer pours a hazy golden yellow color. It has a little more than two fingers of fluffy white head resting on top. The head has good retention, and it leaves some scattered lace behind clinging to the glass.

S - The nose has a nice banana scent to it right off the bat, as well as a good amount of coriander. There is some bready malts and belgian yeast as well. Also there is a good amount of fruitiness, and some vanilla, pepper, and citrus.

T - The taste follows the nose. It starts off with some bready malts, clove banana, and coriander. There is a nice green apple flavor and some citrus. There is also some vanilla, pepper, caramel, and a light hop presence. The booze is pretty much unnoticeable. All of the flavors seem to be present in the finish.

M - This has a medium body and a little higher than average carbonation. It goes down easy and has a really smooth mouthfeel. The carbonation seems creamy and there is some spice presence. There is a little bit of dryness on the back end, and a bit of warmth in the finish.

O - This has awesome drinkability. I could drink this all night. It is just delicious and the feel is great. I really enjoyed this beer, and it is a wonderful representation of the style. I should not have put off trying this beer for so long. I highly recommend trying it out. I will be picking more bottles of this up.

12 oz bottle was poured into a tulip glass.

Appearance: The beer poured a one finger head that has reduced into a thin layer. A nice and hazy golden straw yellow with signs of carbonation coming up through the sides of the glass. Nice lacing on the glass as the beer was drank.

Smell: The fruitiness and the sweetness is off the charts. My nose is in tripel heaven. Breadiness, belgian candy, apples. pears, vanilla, spices, etc.

Taste: Vanilla, apple, pears, bready malts, spiciness from the hops, and some alcohol.

Mouthfeel: smooth, delicious, medium to full bodied, medium to high carbonation, easy to drink, and a little boozy too.

Overall: I have enjoyed this beer a lot over the years and have now decided to review it. Truly a world class beer and so happy to have enjoyed this years ago in Quebec city and now again and again here in New England.
