Aroma is very nice. Fresh banana bread with lots of spice. Sweet, richly flavored, very tangy. This does seem like too much of a good thing, and so many crippled tripels could use a dose of that flavor. Lots of fruit flavors, seems to have pear and champagne to me. Possibly a touch of hops, but the bitterness seems to come from the yeasty mix. Every sip renews the strange complexity of this stuff. Bitter aftertaste that renews the desire for another sweet sip. Hot and sultry stuff.

I've had this 12 oz bottle for a year, and a screw cap, no less. It still says "best before 05-27-13." Years to go, according to these optimistic Canadians.

If you consider price and availability there isn't a better tripel. The spice note in the aroma and follows into the taste is something special, almost peppery in the aftertaste,i don't get alot of fruit in this one although there is definitely a sweetness back there somewhere, hard to go wrong with Unibroue and this is their best.

Time to revisit La Fin for a proper review.

Pours a bright but hazy golden yellow with a nice bubbly appearance. Dense white head caps it off nicely but fades a bit too quickly and leaves no lace behind.

Lots of fruitiness in the aroma with a juicy character and some candy-like sweetness. A bit of clove spice in the background.

A nice bright fruity character up front with some apple and pear notes and just a but of juicy citrus as well. A bit of a bubblegum flavor as well. Spicy yeast notes offset the sweetness with some peppery and clove-like notes.

Mouthfeel is medium bodied and bubbly with a bit of dry finish. Overall, La Fin Du Monde is hard to beat for the style and a great value at $8 a bottle.

Poured from 12oz bottle into tulip glass.

A - Opaque, light honeyed bronze. Pours a frothy two-finger head that, even while pouring, fizzes quickly out of existence. Bright and active. The carbonation held to the narrow curve of the tulip, shooting up to the disappearing head.

S - Rich florals and spice. Heavy on the coriander and citrus, as well as tropical fruit and a bready backbone.

T - Wild, sour yeast hits with a juicy, candied sweetness. Pervasive spice. Big fruit flavors break down into subtle hints of orange, mango, and a bit of pineapple. Bitter, grassy hops round out the profile. Bold and complex, but fresh and lively.

M - Both zesty and creamy, this one's spot on.

Overall - Obviously an astounding beer, and one that could easily please even the most discerning. Big tripel flavors meet up with qualities of a real hefeweizen, and even a bit of the freshness and unique spicing of a saison, to bring a sweet, sour treat. Enjoy it slow. Then enjoy a few more.
