Bottle poured into glass. Pouts mostly clear gold with white head that leaves considerable amount of lacing. The nose is full of fruity esters, notes of banana, heavy clove, some notes of lemon. Taste features more of the same as the nose. Very estery, lots of spice, and nice balance. Mouthfeel is light and refreshing. Overall, delicious example of style.

Served in a tulip. This bottle has been cellared for about 6 months.

I have tasted Fin Du Monde in the past and I was very impressed.

This experience was slightly different. It's a great beer, but I have tasted other tripels since for comparison.

The beer poured a four fingered head. Beautiful light tan color.

The smell from the head is lemon with a strong clove scent.
The smells get stronger with warming.

The mouthfeel is slightly carbonated but pleasant.

The taste is excellent- strong cloves and lemon, but a bit tart and slightly bitter. I recall slight bitterness in my last tasting, but for some reason, it seemed more pronounced this time. A friend who was drinking with me also shared the last session with Fin De Monde, and felt that it didn't taste as good as the last time.
Not sure, but the cellaring could have had an effect- but the beer should have tasted better with slight aging.

Overall, a great tripel. Recently, I tried the St. Bernardus tripel, which is much smoother and more malty than the fin. I also like the Allagash tripel. So when it comes to tripels, one of my favorite styles, it is best to try a lot of them and rotate tastings.
