This complex and heady brew pours a beautiful lemon drop yellow with ample haze and copious quantities of white foam that holds up well. The aroma is potent yeasty esters, apple pomace, doughy malts, a little citrus, candi sugar, and aromatic alcohols that hint at what's ahead. This is a boozy, spicy blast of a tripel, with apple and pear, sweet doughnut malt, orange, musky grapes, and black pepper all vying for your attention, with a more subtle backdrop of dark dried fruits and unripe green stone fruits lurking amidst the pungent alcohol. Fizzy. Smooth dry finish but some residual yeasty sweetness lingers for up to an hour post-indulgence. One of the world's finest and easy to find on the prairies. Hard to knock this masterpiece, maybe the alcohol is a tad forward but its a tripel after all.

Poured a light golden brown with a small creamy head. The aroma of fruit stood out from almost across the table.
It was a very enjoyable bouquet.
The taste was light and crisp with lots of good fruit coming through.
I was almost prepared not to like this one, but honestly, I enjoyed it very much. I will probably hold off again from drinking this until the summer and warmer days

10-11-13:
Its been a while since I have this one. Since those days, I have tasted many many beers, but still when I taste this one, I really do like it.
Many of the triple's I have tasted over the years have been very good and clean. But what I think makes this one even more special is that it is so crisp and clean. I know a few that are NOT big fans of Triples, but this one, they would have a hard time not liking this one.

A - hazy deep golden yellow ,1/2 finger of creamy white head, slow even dissipation leaving solid lace, heavy carbonation apparent

S - floral and sweet smelling, orange and lemon citrus

T - a sweet start of citrus, malts, tangerine, the alcohol becomes bolder near the end into mincemeat and a spicy, dry finish.

M - high fizzy carbonation, very refreshing and creamy

O - An excellent beer which is outstanding in all areas. Intense flavors and well balanced

Poured into a Goblet from a bottle.

Appearance: A large foam head forms. The head slowly collapses and leaves sticky lacing. The body is a hazy dark straw.

Smell: Sweet and fruity. Alcohol esters sit behind an herbal array of scents.

Taste: The sweet and fruity flavors stand out after the first sip. The alcohol emerges in the aftertaste, along with the malts and spices. The malts create a smooth body for the spices to sit on.

Mouthfeel: Smooth body. Fairly carbonated, perfect for the style in my opinion.

Overall: La Fin Du Monde really stands out from other Tripel varieties. It packs an incredible amount of flavor. Certain friends of mine do not care for this beer because it can be a bit overwhelming. I pace myself when drinking this for a couple of reasons... One being the price, and another reason is because it has a complex flavor.

Bottom Line: Not wallet-friendly but definitely a brew that fans of the Tripel style need to try.
