Pours hazy yellow gold color with a lot of sediment in it and bubbles racing up the middle like champagne to a 2-3 finger foamy off white head that faded about average speed and left a foamy cloud on top and decent spotty lacing.

Smells of pepper, yeast, grains, clove, herbs, spices like coriander and tea leaf, fruit like an almost rotting pear and mild alcohol; a very yeast funk driven nose that is Belgian via Canada.

Tastes of yeast, pepper, sweet malt, grains, clove, herbs, wheat bread, floral hops, spices including coriander, cinnamon and tea leaf, fruit like an almost rotting pear and/or apple skins, funk (like a penny) and very in-your face alcohol that brings a mild burn but somehow turns sweet and malty and fades as it slides down. It’s tart, it’s sweet, it burns and yet somehow it’s very complex and tasty; the 9% ABV is not hidden and part of the experience, likely by design as this beer would be great an a Canadian winter warmer. More fruit and yeast draw out as it warms and other spices mix in as it seems to change with each sip. This beer makes you really appreciate the yeast and funk taste.

Mouthfeel is smooth and chewy at the same time, with a medium body, mild fizzy carbonation and a funky, slightly bitter finish that has heat but then fades and cools to a bready/grainy sweetness.

Overall it is a flavorful beer that is heavy and hits you hard with the ABV, but the taste, ABV burn and general composition are spot on for a Triple and this beer nails it. It is intense and has heat, but in a good way that reminds you of why you would drink a beer like this – because it is everything an Adjunct Lager is not: it’s complex, meant for sipping and each sip is different as the beer/yeast morph from exposure to air, temperature changes and fermentation. This is craft beer Monk style and not an attempt to mass produce a dull consistent flavor; this beer sits in the bottle and turns into an experience, and once again for me this brew was a great experience. A high recommendation, his is a great beer.
