Appearance: Pours a hazy pale gold with a fluffy white cap that starts out big and holds at a finger thick.
Smell: Upon opening the bottle, the green apple aroma just leaps out at me...even from several feet away. There's a good dose of yeast, along with a hint of coriander.
Taste: The intense carbonation blurs the beginning, but after that it opens up with a green apple flavor that gets stronger and stronger, but still doesn't quite match up to the aroma. Underneath it is a solid base of fresh wheat and chalky yeast. There's a touch of spiciness, with some coriander showing up here and there. The apple flavor continues into the aftertaste, where it really jumps to the foreground.
Mouthfeel: Highly carbonated, with a nice bottle-conditioned mouthfeel. The carbonation is a bit much in the beginning, but eventually smooths out. The apple adds a bit of tannic length, which sucks a good deal of moisture from my mouth.
Drinkability: Pretty good for what it is. I couldn't drink this all night, nor would I want to. However, it is a very well done brew...in the hit or miss world of fruit beers, this is definitely a hit. Hours later, I'll still be burping apples...
