As its name suggests, Éphémère is an ephemeral ale that comes and goes with the seasons. It was developed as a series to feature a seasonal fruit in a refreshing, lightly spiced white ale. The label depicts a fairy, an ephemeral spirit associated with fruits picked at the peak of ripeness during each harvest season. She first appeared in the spring of 2001 and has since been celebrated on a variety of seasonal fruit ales such as apple (brewed all year long), cranberry, blackcurrant, peach, raspberry and blueberry.

The most beloved and well known of the Éphémère beer series. Its amazing popularity across North America has made it a year-round favourite instead of only a seasonal brew.

75cL bottle poured into two over-sized wineglasses

It pours a really hazy washed out straw color with a pillowy white head and an aggressive carbonation.

The aroma is of sweet/tart green apples very reminiscent of a cider. There is a little bit of like an spiciness that I can't tell if it comes from added spices or the Belgian yeast, but the green apple/cider aroma dominates this brew for me.

Some maltiness comes out in the taste, cutting through the apple aroma. Then comes the apple. It almost the exact flavor profile of a semi-dry cider. A unmistakable green apple taste with some backend sweetness.

The high carbonation fits this type of beer and it makes it pretty drinkable. This is a pretty unoffensive easy drinking approachable fruit beer but not by any means spectacular.

Ephemere (Apple) from Unibroue. Purchased in a mixed six-pack from Franklin Beer Company, Franklin, PA, 27/08/22 for $ 15.00 (Including tax)/six-pack of 12 oz bottles ($ 0.208/oz) with twist-off caps. On room-temperature shelf at store and stored at 37 degrees at home. Reviewed 01/09/22. Note that I use DD/MM/YY protocol.
Stamped “BF 10-08-22” in yellow ink on the rear shoulder. Served at 47.4 degrees in a hand washed and dried Jester King Snifter. Final temperature 55.7 degrees.
Appearance – 3.5.
First pour – Pale straw (SRM 2), hazy. Bottle refermented.
Body – Gold (SRM 5), opaque. Under direct light, same – just looks dirty. When rear-lite, pale gold (SRM 4) and translucent.
Head – Average (Maximum 1.5 cm, aggressive center pour), white, high density and fizzy, leaving a 1.o to 1.5 mm bubble ring and a thin island.
Lacing – None.
Aroma – 3.5 – Strong apple/fruitiness with a bit of fermenting apple as well. No coriander. No malt, no hops, no yeast.
Flavor – 4 – Begins slightly sweet with apple and weak cider, no malt, no hops, no yeast. No ethanol (5.5 % ABV as marked on label) aroma or taste. No gastric warming evolves. No dimethylsulfide or diacetyl.
Palate – 3.5 – Medium, watery edging into the area of creamy, soft but lively carbonation.
Final impression and summation: 3.5 My only previous encounter with this brew was in 2005, well before joining BA, and so had no review. Not bad overall.

Hazy light orange, white head, retention isn't so great, neither is lacing
Apple eau de vie, coriander, vanilla, doughy wheat aromas
Tastes like a wit with a bit of cointreau and apple eau de vie mixing into it, a bit of spice, fresh pasta
Light bodied, could use more carbonation
There are better wits out there

Cloudy amber appearance with a small but long lasting white head and spotty lacing. Aroma delivers the promised apple scent amid the yeast though not much else emerges. A spicier dimension in the taste but still overshadowed by apple. Well carbonated, medium bodied mouthfeel.

Pours orange with a head that did not last too long for me. The smell and taste resembles a cider with a hint of beer. Apple is the dominant flavour, but there is a subtle beer and malt taste that distinguishes it from a cider. Overall worth a try if you like beer and cider.

Pours a hazy orangish golden color with a white head. Apple is distinctly pronounced on the nose with a slight bit of tangerine. Taste is mostly of apple and some spice to begin with turning mildly floral, dry and bitter at the finish. Overall, the flavor is too heavily of apple.

Burnt orange with a tight white head that lingers with carbonation streaming up the glass. Big green apple burst when i cracked the cap off, mix of Belgian yeast and candied apple on the nose, very sweet smelling. Opens with a big blast of carbonation that leaves white grapes front and then folds into classic Unibroue Belgian yeast with spice. Ends dry with a lingering apple skin tartness. Body is light with full carbonation. A nice beer, lots of apple. Not too sweet by any means, would be great on a hot summer day.

Pours a slightly hazy golden color with a small short lived white head.
Aroma is mostly apple with some breads malt and yeast character.
The apple is pleasantly more subdued in the flavor. I’m glad this isn’t as sweet as the aroma. The apple balances well with the malt. Finishes crisp and dry.
Had this from the mix pack. None of them disappointed.

From the bottle, it pours a hazy amber with a nice white head that lasts a while. In the nose, it is initially apple, with yeast coming in as well as malt. In the mouth, apple, with a yeasty breadiness after.

An excellent post-workout summer brew that is better than almost any alcoholic cider I know, and agreeably lower in alcohol than most of the other the offerings from Unibroue, which ranks among the most reliable beer conglomerates in the world. Ephemeral and seasonal, this brew has pretty straw lacing and a lovely smell, like the harder-to-find versions of Éphémère. Because the apple taste is a bit too cloying, I prefer the harder-to-find Blueberry variant of Éphémère and would like to try others; I wish Unibroue would export other varieties to the United States.
