750 ml caged and corked bottle, into chimay chalice
A - the nice bottle pours a hazy orange-straw body with a one inch head that settles down in about 30 seconds. no real foam is left on top, the only bubbles on top of the beer are being actively made from the oxidation point at the bottom of the glass. when not held up to the light the body is a medium golden honey colour.
S - quite spicy and fruity for a strong pale ale. the obvious notes are banana, cardamom, maybe a bit of orange peel. smells much more like a tripel than a strong pale ale. there is a very strong banana fruitiness, making the brew quite sweet smelling, at the bottom of it all some grassy/spicy hops. no real discernible malt body. yeast is also a big part of the whole overall aroma.
T - a very spicy and flavourful beer. not quite anything excpetional, but certainly very solid. initial tastes of banana, spicy hops, alcohol, and a savory coriander. they all blend quite evenly for this stage: the sweetness and banana flavour is in constant conflict with the bitterness and bitter savoriness of the cardamom. the finish is much sweeter than the initial taste: the malts finally come out and mix with the sweet bananas, yeast also makes it debut on the palate. the aftertaste is boozy, the alcohol is quite dry; the other flavours blend pretty much seemingly to make a slightly sweet companion. it is a good beer, but it deviates too much from the style to get top marks.
MF&D - for a big boozer beer like this it is very drinkable, but the only real complaint is that the feel of the body is off. it is a bit too thick all on its own, hence the lack of much carbonation, wouldnt want to make it too thick. bottom line is that the brew draws its medium body from the actual beer itself instead of being a big light body and getting that pump up to medium from the carbonation.

I am sampling a 6 year old bottle that has been in my cellar since its purchase.
Pours a clear copper hue with fizzy bleached white head that foams up 2 cm and fades to a sturdy edge layer and a few wispy islands. A little slow gush of foam on the opening.
Aroma is white wine grapes, biscuity malt and a pretty good boozy dose. Aroma is complex and appealing, definitely has a vinous quality to it.
First sip reveals an average to light body with very fine fizzy carbonation that tingles on the palate throughout the sampling.
Flavor is some white grapes and pears, fairly sweet overall and the booze that made a showing on the nose is nowhere to be found on the flavor.
The beer is very smooth and easy to drink, flavor is complex yet light and airy.
I am enjoying this and wish I had an additional bottle in the cellar to share with good friends.
IF you have any of these bottles aging, it is probably time to drink now and enjoy.

Poured into a Funky Buddha Brewery snifter. No readable freshness date.
A- Pours a medium amber color with a 1/4 inch white head that retains a bit before becoming a thick ring around the edge of the glass and a mostly full sheet of surface foam. Semi-resilient lacing leaves a thick ring behind.
S- Rich, yeasty aroma with lots of spice and a champagne-like effervescence. Notes of white wine and green apple.
T- Has a more traditional Belgian flavor to it with the fruity esters playing a delicate role along with the spice. Very drinkable and a bit sweet with minimal bitterness. Notes of pear and more green apple.
M- Crisp and bright with medium carbonation and a lightish body.
O- Good but doesn't stick out above many of Unibroue's other excellent brews.
