Essentially a barleywine, this all-malt beast is made with 50% white wheat. Though there is malt sweetness up front, it is more reminiscent of honey-like notes versus the more caramel/toffee-like flavors of a barleywine, and it has a lighter body. We wanted the hops to come through as well, and we used a good amount of Amarillo and Centennial at the end of boil, though we did not dry-hop it at all. About half of the batch went to bourbon and gin barrels.

Sample at the brewery. Served in a small tapered glass.
Dark saturated copper orange in the glass, sticky froth around the edges that lasted for a good while. Some spotty lacing in the glass.
Aroma of canned pineapple.
Taste is clean and fruity, again the canned pineapple and fruit cocktail makes it's presence known, with a somewhat burly body underneath. Finishes clean without any alcohol taste. Lingering fruity pineapple but with a somewhat drying presence from the alcohol. Overall pretty balanced and drinkable considering the high abv.

Pours clear gold, sticky lacing, decent head retention. Nose features cane sugar, molasses, light floral hops and some lemon. Taste is pretty neutral in terms of sweetness. A bit of sweet grain character comes through but is quickly smoothed out by the hop profile. Finish is slightly sweet. Nice body and low carbonation. Overall, a very approachable wheat wine. The white wheat really makes for a clean tasting beer.
