A - Two-finger creamy head; translucent golden straw-colored beverage, filled with tons of bubbles and a slightly pulpy look. Thick web-like lacing and good head retention.
S - Strong hop aroma, as well as a noticeable malt presence. Floral, citrus peel, biscuit or toast.
T - Lighter than I expected, with no hint of the 9.5%. Sweet, and follows the nose, except some tropical fruit/mango hops, with minimal appearance of citrus. Very malty, but well-balanced; only specific malt profile I can pick out is caramel, and it's not overpowering. I wonder if this would have been hoppier two months ago.
M - Medium to medium-light. Very smooth, with a hint of unpleasant grapefruit peel in the finish, no notice of alcohol, no sting, and no foaming. Extremely smooth to drink.
O - This is an excellent, smooth DIPA, and it doesn't taste worse for wear despite being over three months old. I'm really curious if this is hoppier when fresher, but based on Union Jack, I wouldn't be surprised if it's just a very well-balanced DIPA.
Bottled in late April, consumed in early August.
