Collaboration with Omnipollo
Inspired by the artistry and assertiveness of Omnipollo's Nebuchadnezzar, I decided on a demure approach. Expressing the lovely hop profile of the original &tying it together with farmhouse yeast and Brettanomyces for a fruity, funky fiesta ;7

Smell is lemon drop candy, Brett funk, candied fruit, and fruity esters.
Taste is citrus, white grape juice, and a hint of pineapple. The beer was not a gusher, but was definitely highly carbonated, and had a fairly dry finish.
Overall, almost a wine-like Brett beer. Delicious and not surprising since I love both Stillwater and Omnipollo.

From tasting notes. L: Hazy gold amber upder a 2” sudsy, gold tinted cream colored foam collar. S: Big grassy nose, saison yeast, T: Starts with a malt base then peach and stone fruit flavors emerge to be met with a big hop presence. F: medium body and medium high very fine soft carbonation. O: This is like someone put an IPA body on a saison chassis and it works very well.

Poured from a bomber into a Brewer's Art glass. Moderate hand. No date identifiable.
A: Hazy to lightly cloudy, yellow body with a slightly greenish tint. 2 fingers of soapy, clean white head. Good retention. Light lacing.
S: Musty brett with notes of horse blanket. Light lemon. Very earthy. Floral hops lurk in the background. A bit light overall.
T: Earth and funk open with some pale malt notes. Citrus, orange zest. A bit vegetal. Some fruit notes are present, but overall the beer is very dry. A light hop bitterness arises late and lingers in an otherwise clean aftertaste. Minimal alcohol presence.
M: Moderate to light carbonation with a medium to light body. Lightly chalky, but suiting.
O: Good brew. Hops are present, but the brett steals the show. Dry and earthy.
Prost!

From a 22 oz bomber, this farmhouse saison style pours a beautiful straw yellow with a monsterous white head that slowly dies to a 1/2 inch thick soapy foam and fantastic lacing. Nose of lemon grass, bret funk, citrus fruits, heavy grain, white pepper, and light spicy hops. Flavors are earthy lemon grass to the sides and back blending with a light pink grapefruit flavor. A light sweetness to the front and sides comes through as it warms, and a deep bitterness from the hops dominates the back with a white/black pepper aftertaste. Mouth feel is well carbonated and lively finishing dry and moderately bitter. I am usually not a fan of this style, but this one is nicely done. More for the hop heads out there, but still a solid well crafted brew.
Cheers.
