2011 bottle

Served at cellar temperature (currently (57 degrees F). Gusher! Thar she blows!

Upon settling, the appearance is cloudy orange with a thin white collar. White sage, coriander, lemon grass, herbal. Red wine character emerges in the flavor, whereas it was a bit lost in the aroma. Lightly sour, tangy, funky. Medium bodied with zesty carbonation. Complex and delicious.

Served into stemware. Cellared for 2 years plus. Decided to do so after tasting a year old bottle and saw lots of potential.

Beautiful crystal clear bright golden yellow color. Vigorous white head poured into glass, dissipated quickly, leaving basically no lacing. Bubbles look very small to small.

Very strong aroma of young and ripe apricots. Very mild barnyard funkiness. Faint mangoes too.

Touch of apples quickly turn into a lively quintessential apricot flavor. There is a bright and very present dry funk. Sourness is there but executed so delicately and expertly, that is doesn't overpower but helps create harmony. As it warms up there is a little tiny bit of apricot sweetness on the back of the mouth as an after taste.

Very dry and complex mouthfeel with lively and vigorous carbonation. After 10 minutes, carbonation is in perfect balance with flavors. Very slight oaked dryness lingers. Very similar mouthfeel to an oaked American Sauvignon Blanc.

This beer is very close to a perfect creation. The best Still Water I've had by far. Worth cellaring, drinking and searching out. White Sage never comes into play (and that's okay!). Sourness, dryness and apricot-iness is unreal. Wonderful!!

Big thanks goes out to BRoss242 for sharing this one before going out for the evening in New Orleans while I was in town for Zwanze Day! Served from bottle into a Poperings Hommel Bier tulip. Poured a hazy yellow-orange with a one finger white head that subsided to a minimal amount slowly. Maintained phenomenal lacing throughout the glass. The aroma was comprised of sweet malt, sage, wood, spice, fruit, dark fruit, and earth. The flavor was of sweet malt, fruit, dark fruit, wood, earth, and spice. It had a light feel on the palate with medium-high carbonation. Overall this was a pretty good brew. When I went into this one I really didn’t find a whole lot of barrel on it right out of the gate, but there was definitely a big spicy and herbal note going on. As it warmed the barrel, made its presence known. It definitely wasn’t overpowering by any means, but added a nice touch of complexity to the brew. Even with all of the spice going on, this one was quite enjoyable and made it rather easy to drink. Definitely worth your time trying this one.

A - Hazy golden orange with a thin finger of frothy white head. Fades fairly quickly.

S - Aroma is a mix of Belgian yeast, coriander, sage, oak, vanilla, sourness, grainy malts, lemon zest, citrus hops, bit of funk.

T - Sour green fruits, tartness, lemon zest, Belgian yeast, oak, vanilla, coriander, sage, sweet grainy malts, some funk, and a touch of red wine grapes.

M - Medium bodied moderate carbonation. Smooth with a sour, tart, and funky finish.

D - Nicely balanced. The barrel adds some great character along with some good sourness and complexity.

750ml bottle into a tulip

A: Pours slightly hazy with three fingers of foam and very active carbonation throughout. Retention is very good.

S: Ginger, brett funk (is there Brett in this beer?), and citrus. Behind that I get some grape aromas. Dry, fruity, quite nice.

T: Citrus and ginger is even more upfront - behind that I get some grapes and spicy oak. Quite dry yet fruity and juicy, the flavors mix very well together.

M: Medium mouthfeel with strong but not overly strong carbonation.

O: I enjoyed this beer - dry and fruity with a nice wine and barrel character. A great Saison, if a little pricy.

750 mL bottle poured into a tulip and snifter, because this is a gusher, needed both glasses to get everything

A- A hazy golden orange with a huge white head.

S- Some nice sour notes, hints of funk, red wine, some oak, light fruits, spices, sage.

T- Tart, red wine, oak, great earthy spices, light fruits. White sage is not as noticeable as in to non-BA version.

M- Smooth, medium body.

O- A great beer, better than the non-BA version. Love the tartness, barrel adds just enough. Wish it wasn't such a gusher. I hope to get a bottle of this again.

pours a pale golden yellow and very hazy with a bubbly white head. The nose has hints of oak with a fair bit of lemon and lightly vegital. The flavor is more lemon with a touch of hop bitterness and light oak. There is a fair bit of vegital with a lighter body and high carbonation.

321jeff hooks it up again. enjoyed out of a stillwater oversized wine glass.

a - opened the bottle and...GUSHER!!! didn't lose much, but still a bummer. brew poured a murky orange with a foamy creamy belgian head. looks just as great as the original.

s - YUM! SAGE! clove, soft pepper, smidge of funk. some banana. the wine really compliments this beer beautifully. perfection.

t - very tart. really excellent. sweet tarts with some sourness mixed in. has the same big vanilla and sage flavor of the original, but the wine barrels really tart it out to the max. wonderful.

m - Carbonation is great. Really creamy. finishes dry and vinious.
o - So take one of my favorite beers, and then make it better!?!?!?!? unreal. i was blown away by this beer. way more sour than the original, but carries the same uniqueness. this is a winner and i'd love more of it. world-class squared.
