Gold colored body under a large, frothy white head. Nice retention as a fat half inch topping. Smells of Belgian yeast and quality pale malt toastiness. Golden raisins, grass, pears, faint unripe banana, and flowers. Flavor continues with the delightful doughy, cereal malt sweetness which transitions to flower petals, mild phenolics, straw, grape, and peppery yeast. Medium bodied, dry, and nicely crisp to keep things very drinkable. Quite a good, sort of rustic, authentic Belgian farmhouse ale.

Appearance: it’s a somewhat hazy light amber with a head that didn’t put up much of a fight

Aroma: the aroma is grainy and sweet with plenty of golden fruit? I don’t know what that is (apricots? White peach?), but it smells like this beer. A dose of funk, but not from fun yeasts. Well, I suppose saison yeasts are fun. Leather. Woody Euro hops finish the bouquet. I wish it were a little stronger.

Taste: the flavor profile is mostly in the white pepper, clove, mace region, but the bright fruitiness shines through. The strong hop presence makes this a bit like a very dry, spicy tripel.

Body: sufficiently dry to enhance the saison-y spice

Overall: domestic saisons disappoint me with few exceptions. I like the idea that they are learning from the originators. Perhaps this fine brew is a harbinger of a wave of good American saisons. I am not familiar with spelt beers, so I can’t speak to what it’s contributed.
