The beer pours a slightly hazy bronze color with a dense fluffy white head. The nose is incredibly pungent, aromatic, funky, sweet, and almost perfect. I have chosen to give it a perfect score because in 485 beers that I've reviewed...I haven't been this enthralled with a beer's nose since zombie dust.
I chose to serve the beer at cellar temp because I remember enjoying it so much at BCTC. The taste is incredible and dank with the most unique malt profile I've ever experienced. It tastes like drinking a meat pie, almost too much like it, but I tell my brain to relax...it's just the dank yeast and malts playing tricks on me. Honestly this is one of the best, most underrated beers that Brian has masterminded...completely worth trying.

375 ml bottle into tulip glass, no bottle dating. Pours slightly hazy/cloudy bright gold color with a 2-3 finger fairly dense and rocky white head with good retention, that reduces to a nice cap that lingers. Spotty foamy lacing clings around the glass, with a moderate amount of streaming carbonation. Aromas of big lemon zest, orange peel, pear, apple, black pepper, clove, herbal, straw, grass, toast, bread, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/earthy yeast and bready malt notes; with good strength. Taste of lemon zest, orange peel, pear, apple, black pepper, clove, herbal, straw, grass, toast, bread, and yeast earthiness. Good amount of crisp peppery spiciness on the finish; with lingering notes of lemon zest, pear, apple, black pepper, clove, hay, straw, grass, toast, bread, and yeast earthiness on the finish for a god bit. Very nice complexity and robustness of fruity/spicy yeast and bready malt flavors; with a great malt/yeast flavor balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth, crisp, and lightly prickly mouthfeel that is great. Alcohol is well hidden with minimal warming present after the finish. Overall this is an excellent saison. All around great balance and complexity of fruity/spicy yeast and bready malt flavors; and very smooth and crisp to drink. A very enjoyable offering.

Served from a green 375 ml bottle.

A - Medium straw color with orange highlights. Cloudy, but not opaque. Huge volumes of bubbles constantly rise through the beer. The head was initially thick and active, almost overflowing the glass, but then it quickly disappeared to nothing. No lacing either.

S - Lots of complex aromas. Bready malt, lemon, black pepper, sweet sugar, lightly musty leather.

T - Strong grassy hops initially, then smooth bready malt arrives in mid-palate. Slightly sweet finish. Across the palate there is a strong layer of herbs and spices. The strongest are lemon zest and black pepper, but there are other elements that are not as easily identifiable. Overall clean but deep levels of flavor.

M - Medium body. Some mouthcoating sweetness, but finish is only slightly sweet. Full, prickly carbonation. Light alcohol presence. Medium to high hops bitterness.

O - This is a great saison in the classic tradition. No flaws; clean flavors and lots of depth.

A pure, white and woolly head fills the glass quickly and settles atop a bright orange brew.

Prominent barnyard and spicy notes flow unapologetically. Distinct notes of Belgian yeast, light fruits (pear, orange, lemon) also tickle the nose.

Oh so fruity throughout with orange zest, more pear, and green apple juxtaposing other and various sour fruits, yeast and spice.

Dry all the way through with a slight chalkiness. Somewhat biscuity. Medium-bodied with a hint of the alcohol.

Delicious and flavorful and not much more you can ask for.
