A: Poured from the can into a Duvel tulip. Body is slightly hazy yellow with a 1-finger white head.

S: Lemony over cereal grains with a touch of wheat twang. Also a modestly earthy yeastiness.

T: First impression: it's light - which is not surprising for a beer that's just 4.5% ABV. Pretty much follows the nose, with cereal grains, lemony bitterness, some grassiness and a touch of tartness; reminds me of a yeasty pilsner, if that makes sense. . . . Finishes quite dry. Refreshing change of pace for the warmer months.

M: Lighter side of medium in heft; carbonation is fairly active.

O: Good stuff. Stillwater's Saisons have impressed me so far.

12 ounce can, w/o freshness info.
Pours heavily hazed yellowy and dull in color. Nice looking fine and light near white head, goes to a film, thicker collar and quality looking strands and webs of fine lacing.

Spiced, perfumed, citric and tropical nose. nice

Sightly tart, brightly flavorful, with more citrus, lemon/lime comes to mind. Spicy, astringent and biting yeast and hop notes in the rear adding to the intrigue and complexity. Real nice stuff, fine summer kinda brew.

Would be great with all sorts of foods- cheeses, thai, spicy all candidates for pairings.

Appearance: 1 inch head, high carbonation, straw yellow in color, clear

Smell: apple and hay

Taste: sweet apple, hay, lemon, slight banana

Mouthfeel: sweet start with funkiness, light bodied and high carbonation

Overall: A good saison. I like this a lot better than their Stateside Saison. Very light and crisp. A good warm weather sipping beer.

12 oz can. Canned(?) date stamped on the bottom of August(?) 2013.
Pours pale golden-yellow; hazy; very good head.

Aroma: banana, bubblegum, green tomato ... there's more, and in total it is much nicer than this mix sounds.

Flavor: some Belgian notes; like nose; no musk or funk.

Feel: very clean, especially for style

O: Another excellent canned beer.

(Served in a globe glass)

A- This beer pours a pale lemon yellow body that is hazy with a thick sticky snow white head of cream that has some nice lacing. There is a swirl of microbubbles billowing to the surface.

S- The hint of pils malt is followed by a soft lemon pith with some slight soapy qualities to it.

T- The dry grapefruit pith flavor is soft with some field corn hints to it and a dry finish that has some sulfur or pepper hints to it. It is a clean but dry finish.

M- This beer has a light mouthfeel with a crisp fizz in the finish.

O- This is a nice looking beer and pretty taste but it is a bit dry with very little yeast profile to make it a session beer. Especially if price is a factor.

A brilliant gold, this Saison is bright and clear. A large, clean white head is heavy and rocky, a strong one nearly a full finger's height after peaking at two. Plenty of patching clings as it recedes.
This beer's overall profile is light but firm, with a gently musty, dusty earthiness and spices under an even base of pale malts with underlying floral and herbal notes, lemon zest gently adding to the depth in each sniff and each sip. A lightly dry, vinous sort of character is a major part of the character.
The feel is bright, crisp and clean in a light body with a strong carbonation that doesn't take away from the soft strength, but it does add a strong spritziness that, with the dryness, throws things off ever so slightly.

Poured from the twelve ounce can into a snifter.

A- Pale, foamy white head, sticky wall of lace. Body is cloudy, golden and shows brisk carbonation. 4

S- Lemony, sweet malt, floral aroma of lilies, peppery. 4

T- Floral, faint malt and grain flavors, tiny hints of honey. The lemony flavor emerges as it warms. 3

M- Sweet, light, mildly effervescent, and aggressively bitter at the finish. Dry like wine. 3.75

There are some decent traits to this beer, but the flavor really lacks. It's mostly faint and offers little to surprise or make note of. 3.12

Pale glowing yellow in color with a very nice looking white cakey head on top. Lace has already started and retention is about a 1/4 inch high. Aroma is sweet, fruity, and creamy. Banana pudding, lemon, and spice... Flavor is spicy and floral with lemon candy. Very refreshing, fun beer. Mouthfeel is very smooth until gradually broken up by tiny tingly carbonation bubbles. Overall good stuff.

Stillwater Classique
12 oz. can, "PCKG 06/16/2014 15:48"

I love that there's nothing at all on the label of this beer to describe it other than "POSTMODERN BEER". Personally I don't agree that it's a post-modern at all, but I think it's ballsy to not put out something more (which can be a huge challenge to brewers who are making something that doesn't quite fit any particular style), and I find it fun. If it wasn't Stillwater I might have passed it over, but as they're a trusted brewery I was sure it'd be good.

So, what is it? It's not a Saison or Farmhouse Ale if you go by current BJCP guidelines because it's just not strong enough, but I wouldn't doubt that there have been beers of this strength (4.5% abv) made in the past... were Belgian farmers even measuring their gravity? Probably not. Nor is it really a Belgian pils.

What it is, is: 1) a hazy, light golden ale with a bright white head, 2) offering the aroma of a sweetish pilsner malt base, and some chalky, spicy, fruity (crisp apple) and phenolic Belgian yeast, followed by 3) the same characteristics in it's flavor... the yeast character somewhat dominates the malt, and it's moderately bitter with some grassy/leafy/floral hop notes that don't appear nearly as strong in the aroma as they do in the flavor; 4) Medium-light in body, and gently crisp, 5) finishing dry with a mineralish edge. Overall, a well-made, balanced, and very drinkable ale that showcases its yeast.
