12 oz can into a wine glass.

Appearance: Pours a hazy straw color. The head is a finger high, and white in shade. And yikes, is the head ever scraggly-looking. Retention isn't horrible, though. Not a pretty beer, not at all. (2.25)

Smell: There's a good level of spiciness here. Aside from the black pepper notes, there are also elements of lemongrass, cream, and sesame seed. A touch of grassy hoppiness comes through, as well. At least on the nose, it smacks of a successful grisette. (3.5)

Taste: Initially, a lemongrass flavor envelops the palate. Eventually, it will finish with spicy, herbal, and even minty notes. It's strange, yeah, but it's also somewhat deep. For a bone-dry, 4.5% saison, that's damn near miraculous. Still, not all of the notes fully work (sometimes the back end is too minty). (3.5)

Mouthfeel: This is quite light in feel, fitting well with its bone-dry finish. Despite the dryness, the finish is extremely long, and almost contemplative. There's a lot of carbonation here too. Definitely a refreshing beer after everything else is considered. (3.5)

Overall: It's not often one finds a beer like this in six-pack cans. Calling it a postmodern beer may be a load of hipster baloney, but this is a solid grisette beer regardless. (3.5)

I love that there's nothing at all on the label of this beer to describe it other than "POSTMODERN BEER". Personally I don't agree that it's a post-modern at all, but I think it's ballsy to not put out something more (which can be a huge challenge to brewers who are making something that doesn't quite fit any particular style), and I find it fun. If it wasn't Stillwater I might have passed it over, but as they're a trusted brewery I was sure it'd be good.

So, what is it? It's not a Saison or Farmhouse Ale if you go by current BJCP guidelines because it's just not strong enough, but I wouldn't doubt that there have been beers of this strength (4.5% abv) made in the past... were Belgian farmers even measuring their gravity? Probably not. Nor is it really a Belgian pils.

What it is, is: 1) a hazy, light golden ale with a bright white head, 2) offering the aroma of a sweetish pilsner malt base,and some chalky, spicy, fruity (crisp apple) and phenolic Belgian yeast, followed by 3) the same characteristics in it's flavor... the yeast character somewhat dominates the malt, and it's moderately bitter with some grassy/leafy/floral hop notes that don't appear nearly as strong in the aroma as they do in the flavor; 4) Medium-light in body, and gently crisp, 5) finishing dry with a mineralish edge. Overall, a well-made, balanced, and very drinkable ale that showcases its yeast.
