Appearance: It would seem that Doesjel is still feeling somewhat lazy and hasn’t fully carbonated, as a rough pour only yields a thin layer of bubbles atop a beautiful golden-orange body. Thankfully I prefer my beers with a lower level of carbonation, so it shouldn’t be a problem.

Smell: Oh wow, this smells fantastic! The nose is chock full of characteristic 3F funk and easily one of the best smelling lambics I have had recently. There is a fair amount of acidity alongside notes of cider vinegar, peach, overripe orange, oak, old wood, musty mildew, dry leaves, earthy, wet hay and a touch of cheese.

Taste: As the nose suggested, this is a fantastically delicious lambic. Notes include: Tons of funk, dry dusty leaves, musty, undergrowth, dry grass, old wood, oak, cider vinegar, lemon peel, and a touch of peach. The beer is fairly dry and offers a very slight bitterness in the finish.

Mouthfeel: As I expected, Doesjel is very close to being flat with only a few small bubbles floating around. The body feels a little fuller than other lambics, however that may just be due to the lack of carbonation.

Overall: Another superb lambic from 3F and one of my new favourites. I am going to have to track down quite a few more bottles!

Bottled 1/12/10 -- Reviewed 3/1/14

A - Deep orange to dark brown, no head, no carb.

S - Sour candy powder, green apple and hay in the background.

T - Very little acidity, one of the sweeter guezes I've had. Borderline caramel. Slight touch of oxidation.

M - Completely dissipating and airy.

O - Mild, interesting variation to a more typical gueze style.

Aptly named, this "snoozer" of a beer awakens from its oaken slumber to delight the senses with the mature and earhten character of oude unblended lambic with peps of younger and untamed acidity peaking through here and there.

With its dainty and sleepy foam that casually greets the rim, its muddled goldenrod color is tarnish and rusty with haze as the ale glows dimly from behind. With great impressions from the more mature lambic, its foam-stance and lace isn't all that to be expected.

Deep, earthy and musty, its leathery perfume takes the senses to notions of tangy limes, dried lemon, wafts of sea air, cellar-like must, cork, attic wood, weathered oak, horse hair and dry chardonnay. Its aromas alone are mouthwatering and jaw-tightening in anticipation of that first sip.

Its dry and tangy taste is mellow, smooth and elegantly malty with mild wheat with straw and stewn hay. While the acidic taste of citrus, vinous wine, cider and light vinegar are all met with oak, soil, brine, tobacco and leather; its sourness is subdued and feathery. With the blend of four vintages at work, the taste of the mature lambic takes precedence over that of the youthful.

Its dry and piquant texture is softened lightly with the wheaty foundation, Snoozer is mild, powdery and delicately tannic, as if fine sawdust. It crisp and clean finish begs for a quick return to the glass as there's ample acidity to strip the palate and refresh the taste buds with ease. Its mild alcohol warmth weaves into the tartness seamlessly.

Completely out of dormancy, this aged ale is alive once again with all the whimsical and elder characteristics from extensive aging; but sparing on the tongue-gripping sourness that often proves too much for the uninitiated. Its simply a gem of an oude lambic as much as it is a gueuze and should be seen as such.
