375ML corked and caged, bottled November 3rd, 2011.

Pours a pale wheat color that is barely opaque. I can see the bubbles stream up from the stem of the glass, but anything on the other side is blurry. The cork came out before I could get the cage off, almost taking my eye out. Predictably, this thing overflowed with foam. The four finger head eventually settles to a thin layer of head with varied bubble sizes, pleasing the eyes. This aroma brings the funk. Hay, sweat, lemon, pear, and grape come to mind immediately, but it's very complex, lots to get out of it. Spices like cinnamon, allspice, and clove come out with a swirl. Must and acidity are present and stay high in the nose for a bit. Tart lemon immediately hits the tongue followed by grainy, wheaty malt. The taste all but disappears for a bit and a strong acidic bitterness comes to the forefront. It stays on the palate dry like cracked grain. This acidity/bitterness is a bit overwhelming at first, but I don't even taste it by the end of the glass. The flavor isn't quite as complex as the aroma, but most of the aromas can be picked out in the taste. Adding the yeast makes it a bit more spicy, like adding rye to the malt. There's also a nuttiness that's present as well. Typical of the style, this is watery. The acidity isn't harsh on the mouth, just the taste buds.

This is like drinking a barn at first. It's full of hay and sweat. Then other flavors and aromas come out. It's so complex. I'd say it's probably the most complex beer I've ever had. I described rye, acid, allspice, nuts, wheat, fruit. I mean, what else can come out of this thing? It was quite a ride and a treat. A special occasion beer if there ever was one.

Appearance: Poured into Duvel tulip from 750ml bottle. Pours a murky amber with a two-finger head of very fine foam.

Aroma: Pronounced sharp wood character, serious funky notes, sweet wheat-y, cereal-y character towards the back.

Taste: Follows nose with lots of funkiness, nicely balanced sourness, wood character is slightly less noticeable than in nose, nice cereal-y character to back everything up.

Mouthfeel: Medium bodied, very lively carbonation.

Overall: Really excellent. Spectacular, very funky and woody gueuze.

The beer comes in a hazy reddish orange color with a large bubbled large white head.

The aroma immediately has this aggressive funky character of farmyard, some slight stinky sock, with lots of fruit character in dried apricot, lemon peel, white grape peel with a substantial white breadiness in there. With some salinity as well.

The flavor follows with that dried fruit apricot and peach. Tons of white wine character. A lemon tartness throughout with some funky quality of farmyard and hay. Tons of champagne like carbonation that goes throughout.

I had this blind against Tilquin and this clearly won for its zesty fruit qualities and complexity with this beer.
