Corked 375ml that literally shot across the room as soon as I began to untie the cage.
A: Rich copper, slightly hazy. Large and small bubbles surge to the top of the glass forming a dense bone-white head. Beautiful beer.
S: Lemony acidity, 'feety' brett funk (nicer than it sounds), wool/barnyard, ripe apples, some oak. Milder than Cantillon gueuze.
T: A supremely well balanced Gueuze. All the characteristic flavors are in harmony. The acidity is slightly muted when compared to Cantillon gueuzes. Begins tart and crisp then finishes with miles and miles of Brett. Extremely refreshing.
M: Bone dry, crisp, dangerously drinkable.
