A: 4.5 Opened carefully without much drama. Pours reddish-gold and slightly hazy with a large white head.

S: 4.5 Lots of pepper on the nose. Wheat, funk, lemon, and oak come through next. The lemon and peppery aromas go really well together; their brightness is also balanced out by some mineral characteristics and richness from the oak.

T: 4.5 Like the nose, there is a lot of lemon, but orange and even some grapefruit flavors come through on the palate. The pepper is a bit more subdued while adding a different kind of brightness to this already bright (i.e., sour) beer. A touch of sweetness and oak sneak in under the sour flavors.

M: 4.25 Carbonation is great and the dry finish is also excellent. There’s a bit of a watery characteristic to this beer; a slightly more substantial feel would help in this regard.

O: 4.5 This is such a bright, flavorful beer with a lot going on. It’s actually quite exciting drinking this as it seems like each sip brings a new flavor. The age from the older beer in the blend also really comes through, tasting old and funky in the best possible way.

December 2012 bottle.

Ap - Cloudy and lively light amber. Fluffy off white head that hangs around for a while and leaves behind steady lacing.

Ar - Sharp lemons and apples, with bretty horseblanket. There is also some must, and dusty grains.

T - Much more dry than sour. This is probably the closest thing to classic Cantillon I've had. It's similar to the aroma. Sweet and dry apples seem to be the forefront. Followed by a grainy lemon tartness.
