(Shortened) Pours a huge head that I have to wait to settle in the glass. The wild yeast used agitated the beer so the head was over five fingers to start out. The head is very fluffy and creamy looking, pretty much completely white. Not sure how the lacing will be, but it looks like it'll be very nice. Head retention is great, which kinda sucks cause I have to wait for the head to settle to a reasonable drinking lever. The bartender actually had to shovel out the head of two glasses of beer, then combined them to make one, somewhat normal glass of beer. Now the head is two fingers. The body is extremely cloudy, visibility is pretty much zero through the beer. I can't really see the carbonation at all. Head retention is still pretty good, still over a finger of head. Overall the appearance is very good, we will see how the lacing goes, but it looks very nice so far. The smell is very yeasty, much like a saison. Maybe some coriander or light fruit. Overall though just a very yeasty smell. Not getting a whole lot else. Not much hops, some light malts maybe. Lemon is a tiny bit present, perhaps some rose hips, but not very present at all. Pretty much all yeast here, and some fruitiness. Overall not a bad smell, but a 3.5 is somewhat generous. It's just a little boring and not very big of a smell. Wow the flavor is very good. Definitely wild yeast, extremely yeasty on the flavor. Very spicy too. I do get some lemon, the rose hips are a little bit present as well. They add a nice touch to the beer. Somewhat of a crazy taste here, but good. Very tart, sour, lemony, yeast, wild. Not extremely complex, but for sure more complex than your average beer. Overall a very nice taste. Somewhat sour in the way an adjunct lager would be sour, but it has a nice touch to it, and it is in no way a adjunct lager. Much better. Maybe this is a 3.5 taste, but I'm gonna give it a 4. The mouthrfeel has a very nice carbonation to it, very small bubbles, but a nice lively feel to them. Not a small carbonation at all, but the small bubbles make it not huge feeling, even though there is probably more than it seems. The body is pretty damn nice too, pretty darn thick and wheaty and yeasty, and just very nice overall. Not an absolutely huge body, but pretty big, and really great for the style. Drinkability is very nice. It's pretty darn tasty, and pretty light, not hard to pound at all. Overall a very good beer, it's a solid 4. Pretty damn unique, nice and tasty, like a saison.
