Duvel Tripel Hop may switch the emphasis from yeast to hops but yeast has still clearly played a big role - the plump cotton ball-like foam is visible evidence of a healthy fermentation (extra impressive given it's 9.5%). You really wouldn't expect such a bulky, rocky, and sticky head from a beer of such fair and seemingly feeble complexion; this yellow colour is light as straw.
I'd describe the aroma as blissfully hoppy - 'blissful' in the sense that its tropical fruit air brings me great joy, yes, but also in that the hops are on top of the world, brimming and elated by an absence of toasty or sweet malt that would otherwise mob their delicate floral and orchard blossom notes. And wouldn't that be a shame - the hoppiness of this bouquet is outright divine.
And how great it is that all those apricot, peach, passionfruit, and cantaloupe flavours carry onto the palate too? The beer tastes every bit as ambrosial as it smells and features a light and airy fresh-baked white loaf flavour as backdrop. Fresh-cut grass and a distinct note of herbal-spicy, fresh-picked chive flower (likely courtesy of the Saaz) are easily appreciated too.
For a Belgian offering the yeast is notably absent. It's been relegated to a supporting role (it must have a hand in all the rose petal and orchard blossom qualities). Even the characteristic white pepper and clove spice notes that have made Duvel - and the Belgian Golden Ale style - famous are unusually toned down. In their place is something closer to lemon verbena and mint leaf.
Duvel, I don't know how you do the voodoo that you do so well. This combination of Saaz, Styrian Goldings and Mosaic hops is magical, to say the least, and has allowed me a Walden-like spiritual awakening and peace with nature. This is a showcase of raw ingredients and simplicity at their best. Tons of hoppiness without the bitterness. This 2014 vintage is highly recommended.
