This was an 11.2 oz bottle of Maredsous 8. I picked up a 4 pack last week and decided it was time.
The beer poured out dark with a billowy creamy head that lasted throughout the whole beer. Nice sticky, foamy lacing around the entire goblet. The color of the beer away from the light is mahogany, up against the light it is a nice deep amber color.
The nose is a little yeast and spice(maybe brown sugar). Nice little bit of alcohol and rich beer smell.
The first couple of sips had a slight metallic tinge, this went away quickly. The flavor is rich and earthy. There is a slight sweetness in the aftertaste. There is a bitter roasted finish that lingers around. As it warms up some floral notes appear. When I poured the yeast from the second bottle in to my glass the complexity of the flavors was elevated. The bitterness was complemented by a nice fruity touch.
The mouthfeel is very creamy due to the rich head that lingers during the entire drink.
I like this beer it is entirely drinkable. It is relaxing and enjoyable. The 8% is evident after 2 bottles, my ears are red!!!

A: Beautiful chestnut body and head, rocky, lasting, lacing. Yes it matters!
S: Liquor like, Cointreau, is the first impression, along with lots of grass, then blend of dark malts with plenty of fruit notes: apple, plum, figs, cherry. Want more of it, still subtle as it warms.
T: Follows the smell, again with the after-dinner drink quality. In this case, savored on the ferry home. Flavorful, malty dark caramel, spice, brown sugar, cocoa, latte, and stout. Sweet, fruit liqueurs, followed by drying, slight bitterness, into a crisp, roasty finish. COMPLEX!
Mouthfeel: Medium-plus w moderate carbonation.
O: Must try. Unusual grassy and liqueur like Belgian. Recommended.
