Big rich toasted biscuit flavors. A whole lot raising wheat bread on the tongue and the nose. Tangy sharp graphite bitterness finishes solidly but a honey sweetness lingers long after the short lived bittering. The flavors aren't terribly complex, but I do rather enjoy it.

My new favorite! Very sophisticated but pairs well with something as simple as pizza. Love it!

So, I know it's a Tripel and therefore has a higher ABV. Still, this is a sneaky bastard. Pours a rich, dark orange with a fine-bubbled white head. Aroma starts with the yeasty, bready and moves into spice and some caramel sweetness. Flavor is a more intense version therein, but with a slight reversal. The spice notes start, followed by the fruity esters. To me, a brighter dried fruit, more like golden raisins and cranberries or currants. The yeasty flavors are of a fresher hay, and it finishes with a tart (not sour) dryness not unlike a champagne. The problem here is that this lighter-medium bodied Tripel washes across the tongue pretty easily. And the 10 ABV, which is fairly well hidden, can sneak up on you.

Pours a clear medium orange with thick sudsy white head, thick lace strewn about the place. Smell: pear, pepper, mild spiciness, bready with a note of milk caramel. Taste: bready, pear, apricot jam note, peppery, grapeskin and mildly herbal. Seems to be pretty archetypal, well done.
