Pours an effervescent honey color with 3 fingers of pearl colored head. Goes slightly hazed, decent head retention & lacing, hazing pick up once bottom of bottle is poured

S: Faint wheat notes, white pepper, a whisper of phenols

T: Breadyness, white pepper & faint juicy fruit notes up front & pears. Dryness, more pears & a trace of peppery yeast once warm. Finishes fruity, slightly peppery & dry

MF: Medium bodied, firm carbonation

Drinks easy, but not entirely true to the style. This in the lower echelons of Wit beers. I guess I'm glad I go to try it, maybe not...

Poured from the bottle a slightly hazy honey yellow with a very thin and fizzy white head.

Aroma of Juicyfruit gum, lemon zest, Belgian yeast and light grains.

The taste matched the aroma. Light Belgian yeast and tropical fruit along with light grains.

Medium bodied and wet with very little carbonation.

A fairly average Witbier from Cathedral Square. Not bad but still disappointed.

Cathedral Square Belgian-style White Ale

Notes:
Appearance: standard for the style. Perhaps slightly darker in color. Head retention fair, lacing average.

Smell: limited, but typical: coriander and lemon/orange zest over light wheat malt.

Taste: limited but typical: gently tart and lemony with a dusting of spice and a thin cloak of fruit (apple, plum). Balanced by a soft, wheaty and nutty malt base, and subtle yeast chalkiness and dull bitterness. Balance rules over depth of flavor here, but it leans towards acidity and lemon notes. Great drinkability. Dry finish with quick passing lemon, and grassy/spicy hops; followed by lingering coriander and slight yeastiness. Somewhat herbal and subtly leafy/woody.

Mouthfeel: light-medium in body. Nice fine-bubbled carbonation gently bristles and zests the tongue. Crisp but not over-done.

Overall: Clean. Well-brewed. Refined. Restrained flavor, but at least it's not overly sweet or overly spiced... restrained preferred. Very drinkable.

22 oz beer was poured into a hefe glass.

Appearance:This beer poured a crazy head that is taking some time to reduce down. It is a golden straw yellow with some haziness and vision of bubbles coming up through the glass.

Smell: very bready, yeasty aromas, spices, sour mash, and some citrus in there too.

Taste: What I smelled in the beer came off pretty light. The taste is there, but it seemed a bit weak compared to other wits.

Mouthfeel: smooth, high carbonation, medium carbonation, chalkiness and bitterness, a bit watery, and some lingering spiciness too.

Overall: Not a bad witbier from a fairly new brewery in St. Louis. Got this bottle from volunteering at the BBF last month here in Boston. This beer does go well with this warm hurricane weather we are getting.
