L-Looks okay, I guess. Small head that disappears to nothing. Bubbles are there, and it's hazy and opaque with a straw golden brown color.
S-A little bit of clove and some banana and spice. The Phenolic notes are a bit run of the mill, but it's still decently pleasant. There isn't anything offensive about it at all. Just not much there.
T-Follows the nose. Some banana and clove, maybe some cinnamon? Really not much there at all. Kind of giving me hints of Saison flavored sparkling water...
F-Dry enough. Too much carbonation, though, to be honest.
O- Not impressed with this beer to be honest. It's nothing awful, it's just more of something I guess one would pound with a ton of crawfish, or party with at Mardi Gras. It's a bit of a party beer, and there's nothing wrong with that. I just wanted a little more I guess.

"French farmhouse ale." 5.7% ABV. 20 IBUs.
Pours all head in my pint glass. Foam sticks around 8ish minutes - not ideal. Seems to have attenuation and carbonation issues just looking at it. Body colour is a dull copper.
AROMA: Dry starch. Malt sweetness. Dry crackery malts. Peppercorn spiciness from the yeast. Scintillae of green apple ester.
Suggests a dry chore of a beer with some spicy and grainy flavours but little else.
TASTE: Matches the expectations created by the aroma and appearance. Underattenuated yet oddly dry, hitting on crackery malts, 2-row, graininess, spice, peppercorn, and green apple off-flavour.
Yeasty spice runs rampant through the flavour unchecked by malt or hops. Vitaminy and earthy, but not pleasant.
The malty sweetness at the core of this beer is quite troublesome; a true Biere de Garde would be much better attenuated.
TEXTURE: Dry, a bit rough, unrefreshing, medium-bodied, overcarbonated. Scratchy on the throat going down. Not syrupy, boozy, hot, astringent, or harsh.
OVERALL: A failed attempt at a Biere de Garde and not a beer I'd buy again. Tastes like a bad homebrew attempt at a saison style ale.
Seems like a beer brewed not out of genuine interest in the Biere de Garde style but rather out of the marketing potential in brewing French styles as a Louisiana brewery. Just my $0.02.

L: A light amber coloring, with one finger head
S: Toasted malts, some sweet caramel notes, slight breadiness.
T: A fine tasting, crisp toasted malt flavor that finishes with a nice tart sweet finish.
F: Good caerbonation, good body, full flavor
O: I really enjoyed this beer. I don't understand why all the negative reviews. The biggest fault I could find was that they marketed it as a "Farmhouse ale" or a "Biere de Garde" but it really should be marketed as an Amber ale. There was no indication to me of wild yeast, bretty flavor, or that funk that you'd expect in a "farmhouse ale". I enjoyed this beer a lot and agree that it would pair nicely with Cajun cooking, a nice sweet break from the spices found in those dishes.

O: I really enjoyed this beer. I don't understand why all the negative reviews. This beer looks nice as you pour it into the glass, a dark amber color with a thin head. Taste is sweet and sour, hinting of caramel, biscuit and light honey - with a lingering bitter aftertaste. Smell is fruity.
According to Garrett Oliver, "The Brewmasters Table" the Bièr de garde pairs well with:
Bouillabaisse, Cassoulet, Charcuterie, Choucroute, Coq au vin, Crudités, Roasted Duck, Fondue, Game, Onion Tart, Pheasant, Risotto, Truffles and a variety of Cheeses.
