A - Pours a clear, light amber with a one finger frothy head.

S - Herbal/vegetable, light spices & bready malts.

T - Lemon zest & grassy hops along with light belgian yeast qualities.

M - Light body, medium carbonation, crisp & easy drinking.

O - I can see the saison qualities. It would pare well with crawfish since it's not overly spiced.

Bayou Teche Brewery Saison D'ecrevisses

Appearance: solid amber, puffy head and a bit of lacing.

Smell: fermenting fruits and a barley backbone.

Taste: sour citrus and apple notes and a hint of barley in the backbone.

Mouthfeel: medium and sour with a pleasant smoothness.

Overall:
This would pair very well with boiled crawfish. I really wish I had some to go along with this brew. It is not the most complex, but one can find many fruits included inside. This would be great in a session.

Huh, very surprised to see the decent reviews on this beer.

Let's get down to it, there were basically no saison aspects to this beer. Tastes like a light beer with some odd sweetness on the end. No discernible peppery or spicy notes.

Overall, this was a fail. Perhaps we had a bad/old bottle, but this was mediocre at best.

Pours out like a light pale ale with a thin head. Smell is strong of herbal, floral hops with some caramel backing. Not much yeast presence. A little bit of diacetyl? Taste is about the same. Yeast is barely there. Some caramel malt sweetness is apparent. This reminds me more of what you'd think of as a biere de garde as it is more malt and hop forwarded than yeast forwarded. Kind of toasty in the finish. Mouthfeel could use a little more punch. Overall this isn't that bad. Ridiculous label.

Bayou Teche Brewery - Saison D'écrevisses

Got this thanks to a friend and shared it with a friend.

Look - Pours an almost clear golden with a slight copper hue. Thick foamy head with chunks of dense lacing. Slight carbonation.

Smell - Sour Belgian yeast Saison. The sour is almost slightly bitter. Floral. Proves a point.

Taste - light watery with a smooth sour yeast and a surprisingly bitter pinch. Crisp and dry.

Mouthfeel - If Saison was a lemonade, and that lemonade was a beer, this would be it. Thirst quenching and crisp. Not boozy. Great drinkability. Dry as hell. Light bodied.

Overall - Quite a take on this style. Remarkably dry, crisp and refreshing. Maybe not the best representation of this style but as a Summer brew goes, this definitely works.

Had a sample of this at a beer tasting at Weidmanns in Meridian.

Pours golden color with bright white head that lingers pretty well.

Lots of plum and banana notes from the Belgian yeasts. Taste is similar with hints of grassiness. Very bitter in the finish and aftertaste.

Mouthfeel is light bodied and dry. Average carbonation.

Overall this is good. Worth a try.

poured into a pint glass

A: Hazy golden with a white half finger head that slowly dissipated down the bayou.

S: Light malts, citrus-y, floral.

T: Light, fresh. Yeasty. I'm picking up lemons. Malts slide in with a light peppery finish.

M: Light to medium; low to medium carbonation.

O: I was hoping for better, but to me, it's just average. A good session beer for summer and crawdads. Wish I'd had a couple pounds of mudbugs to try some with; sounds like a great pairing.

Poured from a 650 ml bottle into a footed tulip.

A: Golden, ruby hue. Pours about a half finger, bubbly, white head. Settles quickly, leaving a smattering of bubbles. Tiny effervescence rises throughout. Thick lacing remains.

S: White bread and hay, with just the slightest raspberry and orange citrus tone.

T: Grainy and earthy, with a nice moderate bitter hop, bitter pecan shells, and a distant rumor of fermented fruit.

M: Light body, crisp character, steely feel remains throughout experience. Just a bit of a bitter finish.

D: Sip and enjoy, or powerdrink... your choice.

Atmosphere is pretty good. Nice hue, pretty heavy carbonation, bubbly head, and pretty solid lacing. Nose is bready with slight fruit notes. Grainy flavor with a really nice hop balance, a tease of fruit finishes it off. Overall, this is a really good quaff.
