Simcoe is the fourth release in our double IPA series that showcases our favorite hop varieties, one by one, with each consecutive release. This hop was a game changer when it was released 14 years ago because of its bright layers of overripe pineapple, guava, and sage. Look forward to many upcoming releases within this series of single hopped double IPA's.

Here is another nice surprise in this single hop series. Noble seems to know what to do with any of these hops, and resists the urge to overdo it. This starts with a sweet malty taste that shows off the intensely fruity hops. Tart citrus with a tangerine aroma. Hot and rather acidic, as you might expect. A touch of pineapple and a cloud of fragrance. From the 22 oz bottle purchased at Bottlecraft in San Diego.

Bottle served in a tulip. There was a burst of citrus nose when the bottle was opened, a good sign that was confirmed by the first sip. A well balanced DIPA that has loads of flavors for a single hop beer.

1. That's a nice, simple name for a beer. The "bobby" or "jane" of beer names. That's a lost art, what with the recent onslaught of "Spaytlins" and "Cressicars."
2. Nice understated bottle art, too. H-have I become a 60-year-old in the last few weeks?
Pours a bright, very vibrant orange with a soapy and retentive white head. Smells herbal but not very cannabis-y, with some sweet honey malt and a little bit of pineapple. Not quite the tropical fruit bomb I was expecting from a beer with "simcoe" in its name, but still interesting and well balanced.
Tastes like it smells, albeit a bit more hop-heavy. Thick simcoe nodes dominate throughout, and while they are nominally well balanced/accentuated by sweet malt, the hop profile itself could use some balancing. I guess a straight-simcoe IPA isn't completely by cup of tea, but I can appreciate the craftsmanship here. The fact that it was first released 14 years ago, back when proto-beersmen were locked in their basements drinking homebrewed shoe leather-tasting ESB's, this is quite an impressive beer.
