Bottle poured into a Hill Farmstead stem.
Pour: Pours a lightly hazy, bright straw yellow with a finger and a half white, fluffy head. Some nice lacing, and the head sticks around for a little while. Wonderful looking saison.
Smell: Big white wine barrel up front, mixed with funk, oak, and bright lemon. As it warms, the funk becomes more pronounced. Citrusy and bright.
Taste: Immediate white wine barrel and oak up front, with a heavy funk and strong lactic tartness. Lemons and citrus. Very Art forward. Mineral funk controls the mid and finish, but plays well with the bright lemony tartness. Finishes quite dry. As it warms, the oak and funk become more pronounced, exhibiting more lambic qualities.
Mouthfeel: Quite tart and borderline sour. Perfectly carbonated.
Overall: One of the best Hill Farmstead beers yet, and time is only going to help this beer progress.
