375 mL bottle poured into a snifter.

Appearance - Black body. Medium off-white head. Thick collar.

Smell - Light fruitiness. Roasty. Light acidity.

Taste - Sharp tartness. Toasty malt moves into deep roasted malt. A bit of lemon. Yeasty. White wine peaks out behind the roast.

Mouthfeel - Medium body. Well carbonated.

Overall - Tough to pull off the dark saison. Doesn't really work. A bit of a struggle.

Pours a Deep dark brown with half a finger of khaki head. Lemony sourness and a touch of malt vinegar hits the nose first, followed by leather and dark fruits, roasted nuts, and bit of cocoa powder and caramel. Similar flavours as in the nose, lemony sourness (very little vinegar that I got in the nose), dark fruits, dank old wood and leather that lingers on the tongue. Getting some red wine as well. Interesting stuff.

Poured from the bottle into a Hill Farmstead wine glass.

Deep brown to near black body, hinting at dark chocolate color. Slightly one finger cream tan head. Spotty lacing and a good tan collar.

Aroma hints at moderate funk and oud bruin slight character. Mild sweetness but hitting at faint caramel and minimal sourness. Moderate acid quality and faint spicy vinegar.

Palate comes with a good sourness and moderate funk. Light toast and matching vinegar mild quality. Hints to oud bruin with less sugars and depth. Classic peppery saison yeast but with a lighter touch.

Overall a decent hybrid saison and reminds me of mild bruin quality. Not mind blowing but quite fun.

A- Pours pitch black with dark brown hues at the edges when held to the light. A finger of tan head slowly recedes to a solid film and leaves some laving.

S- Smells of toasted oak, nuts, lightly tart apple, and a firm barnyard funk. The walnut is wonderful and reminiscent of Elaborative #1. A subtle smokiness brings complexity and pulls the aroma together.

T- There is sweet and nutty malt at the front, followed by oaky tannins, smoke, and finally a puckering tartness on the finish. Walnut, green apple tartness, and oak are the primary flavors here, with light smoke and sweetness bringing complexity and Roundness to the flavor.

M- Incredibly smooth with light, prickly carbonation. Puckering in the finish.

O- What can I say? Another fantastic and eclectic beer from Hill Farmstead! So complex, strange, but wonderful!

Took a bottle to share at Pin's yesterday.

Dark burgundy pour, deep and opaque, topped with a small cap of foamy beige head that retained as a ringlet through the entire session. The fluid left some thin legs on the glass. Great aroma, dark fruits, red wine, funky wood. This really didn't resemble a saison in any way, and I'd say this is a full-blown wild ale. I actually haven't had Edith (the base beer) yet, so I'm not familiar with that to compare it to this, but I just know CD8 was notably more like a wild ale and less like a saison. A firm tartness in the taste up front, notes of black cherries, red wine, raspberries, with a minor citric sourness, bretty funk, a slight barrel profile, somewhat overwhelmed by the fruitiness and tartness of the beer, but still subtly present. Also a slight dark chocolaty malt element, fleshing out the body and giving more of a rich mouthfeel, balancing out the tartness. Very well balanced, medium-full body, lush mouthfeel despite the acidity, and a dry finish. Really liked this one a lot.

375ml bottle poured into a mini-snifter 8/9/2014.

A- Dark black body, opaque with a finger's worth of white head. Was a gusher out of the bottle unfortunately.

S- Tart cherries, a bit of lacto and some funk. Sort of a plant matter thing going on here. Smells good.

F- Not quite so complex as the nose; some tart cherry and the Vermont funk with a bit of oak.. again, sort of a plant matter thing going on the finish. Nothing too special to be honest.

M- Medium in body, just right in the middle of thick and thin, good carbonation.

O- It's a solid BA black saison, but definitely nothing I'd go for again. Highly recommend Phenomenology of Spirit instead.

Poured into my HF tulip. Dark brown, with a nice one finger head. The creamy head lingers for a while. Great lacing, too. Smell is sour, with some oak, pepper, some dark fruit, some green apple. Taste is sour upfront. On the backend I can taste that green apple and ripe cherry skin. Very nice sour funk and the oak barrels are very prominent. The mouthfeel is creamy and somewhat thick. I remember the first time I had Edith, a year ago or so, and thinking how cool it was to have so many flavors in one beer. There were characteristics of so many beers. I taste a lot in this beer, as well, with the barrel element added. Very good beer, with many different flavors.

375ml bottle poured into a Hill Farmstead oversized wine glass.

A~ really dark just as it should be. light brown around the edges with a red hint to it in the light, this has to be from the (wine) barrel. a nice tan head and a tiny bit of lacing.

S~ wine barrel funk up front, sour dark cherries mid pallet, all followed by peppery saison yeast. along with some brett funk coating the whole aroma. mmm...!

T~ !!!! and here we go! follows the nose with a lot more to offer. funky, sour, peppery, bready yeast races the pallet followed by tart dark cherries, raspberry, lemon/lime funk, and some chocolatey malt. all ending with more leathery bretty oak funk as it goes down.

M~ very smooth and refreshing. carbonation is nice as well. not much more to say here! all good!

O~ this is definitely BA Edith but i really wonder what else is in there. i feel like there might be a dab of a stout of sorts adding to the malt characteristic. once again the dark versions of the CD series really stand out for me. theres a lot of people who i've came across who don't really dig Edith, maybe its the whole dark saison thing? i don't know but Edith along with this are some of my all time favorite brews. hopefully this will turn some more people on to the style. its a shame there wasn't more to go around. i sure hope Edith will be released again this spring.

Consumed during a CD4-10 tasting. Pours a dark black with slightly off-white bubbly head and some spotty lacing. Aroma of dark fruits, grapes, cherries, dark malts, light char, and a hint of black chocolate. Tastes of black cherries, grapes, lightly tart wine, oak, lightly charred malts, and a light black chocolate.

Overall this was a great blend that lives up to the other blends in the series. You definitely get the Edith however I think the barrel smoothed it out nicely and added an additional complexity and tartness. Wasn't my favorite of the series and was slightly below CD4 in terms of black saisons, however I think this is better then a lot of people give it credit for.

a highly refined, and very vermont brew right here, this is quintessential hill farmstead, and is an appreciably different dark saison/sour type that shows its oak well. more brown than black in color, with a spotty but reappearing tan head, soft as a cloud. the nose here is tartness first, more than the usual brett, approaching the sour realm, with lactic lemon acidity and a died straw complexion. the malt depth doesnt really show in the nose like it does to lead off the taste, ashy and raw and laden with cocoa and hot tar. a woody middle to this wild ale, the yeast starts to come out too, super complex and different, but not out of line. the flavor at this point takes this beer to the top of its class, with a subtle rolled tobacco hint, and an almost tart blackberry property, from the grain and yeast combined i imagine. layered is an understatement, this thing comes in set waves one after the other but never abrasive or fierce or sharp. rather unwinding and evolving. soft carbonation teases acidity, but the finish remains mellow, oak driven, and worthy of the allure surrounding this highly intellectual and expertly crafted ale. worthy of the highest praises, i am lucky to have friends who care enough about me to share bottles like this. life is good.
