The idea of creating a hugely drinkable version of the Italian sipping drink limoncello inspired the three brewers of Siren Craft Brew, Mikkeller and Hill Farmstead to craft a beer that doesn’t fit a strict style category: Lemon Cello IPA. Only hinting at the amount of hops used, this IPA has a malt base of pilsner and wheat to create a subtle crisp backbone that goes through a 24-hour souring process. Added lactose provides sweetness, while lemon zest and juice offer counterpoint and balance. To finish, all of the lemony citrus hops are added in by the bucketload, to create an unbelievable gem of a beer.

Notes: IPA? It doesn't seem that bitter. Clear straw gold body beneath a frothy bright white head. Effervescent carbonation. Aroma is reminiscent of lemons but almost as if they were in some kind of cleaning product... chemical I guess I mean to say. It also displays some malt, and it's floral and perfumey. The flavor delivers the lemon more properly, and it's a touch sharp, or tart, with some grassy hops backing it. Kind of one-sided.

This brew is a clear, orange colored liquid with a moderate white head. The smell is intensely lemon with a backing of malt and alcohol. Intense. The taste is of lemon peal and booze. It's got a sweet, boozy, and bitter flavor. Imagine lemon soaked in alcohol, with some hops. It really doesn't work well together. Jagged and poorly conceived. The finish is tight and warm. Okay.

Poured from a bottle into a pint glass
L:Hazy yellow to orange color with a finger of head. Nice glass lacing.
S: Lemon, Lime, pineapple, orange, grapefruit, white grape, and white white.
T: Massive lemon, lime, white grape, and grapefruit tartness. Tartness milds into sweet bready malt and "barn yard" flavors. Almost no bitterness to speak off.
F: Bubbly mouthfeel.
Overall this is a very interesting IPA. It reminds me more of a sour or wild ale because of the tart and sour flavor while the aroma is more like an IPA. A good beer to sip on while eating a meal.

500 ml bottle into tulip glass, best before 1/14/2016. Pours very hazy deep orange/amber color with a 2 finger dense and fluffy off white head with good retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass. Aromas of big lemon, lime, grapefruit, tangerine, orange peel, citrus rind, pineapple, berry, pepper, pine, wheat, honey, cream, herbal, and floral/grassy earthiness. Damn nice aromas with great complexity and balance of citrus/tropical hops, lemon juice, and pale malt notes; with great strength. Taste of big lemon, lime, grapefruit, tangerine, orange peel, citrus rind, pineapple, berry, pepper, pine, wheat, honey, cream, herbal, and floral/grassy earthiness. Good amount of piney/spicy/citrus rind bitterness and citrusy tartness on the finish; with lingering notes of lemon, lime, grapefruit, tangerine, orange peel, pineapple, berry, wheat, honey, cream, and herbal/floral/grassy earthiness on the finish for a while. Fantastic complexity, robustness, and balance of citrus/tropical hops, lemon juice, and pale malt malt flavors; with a great malt/bitter/tartness balance and zero cloying flavors after the finish. Good amount of dryness from bitterness and tartness. Medium carbonation and medium-full bodied; with a very smooth, moderately creamy/sticky/resinous, and lightly acidic mouthfeel that is great. Alcohol is very well hidden with only a small warmth lingering after the finish. Overall this is an awesome fruited double IPA style. All around great complexity, robustness, and balance of citrus/tropical hops, lemon juice, and pale malt flavors; and very smooth to sip on for the big ABV. A highly enjoyable offering.

Lemon, Citric, Puckering, Dry

Brewed in collaboration with Hill Farmstead and Mikkeller, Lemon Cello adds lactose, lemon zest and juice to an American IPA. Hazed amber with a creamy head, it has a big lemony nose with some bready malts. Crisp and dry with a creamy carbonation and a firm body. A massive smack of tart lemon juice up front becomes puckering sourness with lemon zest and oils. Leafy hop bitterness beneath with another layer of lemon, some pink peppercorn, wheat tannins, a dry finish and a lemony linger. For those who dig Limoncello, or citrus added to their IPA, this delicious punch of lemon is a must try.

A bit tart to say the least. The smell was IPA all the way, the label states "bucketloads" of hops were added and you can tell by the smell (no pun intended), but the taste was extremely lemonesqe (?) but in an extremely tasteful way...an amazingly tasteful way!! The advertised 9.1% abv was hardly noticed until the "warm glow" creep up ;). Do yourself a favor and give this one a try, you'll be glad you did!
