Leaves of Grass represents our brewery's collective pursuit to create, explore, and challenge. For each batch, we employ uniquely different processes and ingredients, all of which further our understanding of the art and science of brewing.
The first release, brewed on July 4, 2015, is a 4.5% abv farmstead ale brewed with green tea (Matcha), citrus (grapefruit) and apple water (from Eden Ice Cider - byproduct of their ice distillation process) - this batch was fermented and conditioned in 400 liter oak barrels.

This one pours a slightly hazy pale yellow color, with a small head, and a little bit of lacing.
This smells like melon, funky orange, green tea, funky apple cider, white wine, and oak.
The green tea and apple water here really create a fascinating and ultimately delicious flavor combo here. It’s got a light and pleasant green tea sweetness, with a floral and citrusy funk, some light oakiness. There’s melon, stone fruit, and orange peel, as well.
This is slightly creamy, with a nice drinkability, and very little acidity.
I really like this series, and wish new entries were still coming out.

L - reallly hoping this one doesn't foam up like crazy like the LoG from a few weeks later... almost had me fooled, but there's the foam! A quick pour in the glass stops the bleeding. Lemon-yellow with slight haze. Gold, like peach skin.
S - smells of overripe apples. Borderline rotten, but far from rancid. Very pungent and earthy. Like walking through an apple orchard. Underripe pear and the familiar must of green tea.
T - more apples. Ripe and red. Tart. Mixed very well with the green tea. Almost like the tea further ripens and amplifies the apple. So much apple! So many varieties. Granny Smith, macintosh, golden delicious, empire... very lifelike. The oak is subtle but forms a strong backbone to tie everything together. Wow. Getting some kiwi and grapefruit on the finish.
F - light and fluffy, but with the right amount of silk. Far more robust than you'd expect out of 4.5%.
O - quite impressed with this one. The flavors are odd and unique, but mesh beautifully together. I've not had many brews where each flavor plays both a support and lead role. Constantly changing, flowing in harmony. Nicely done!

S: A whole lot of farmhouse - earthy with some hay and spice - pepper - some citrus, grapefruit peel - light fruits, apple, green apple, white grape - not much green tea, if any, but I'm not really complaining - light sweetness - chewy oak
T: Light but very complex - nicely tart but not really sour - a sharp tartness - some nice saison flavors, saison yeast - wheat and pale malts - spice with some pepper - floral citrus and grapefruit zest - tart green apples, light fruits - some light sweetness - nice oak, woody
M: Medium body, medium carbonation, smooth but also a crisp, tart finish
O: Nice job Walt
Hill Farmstead makes consistently stellar saisons, and Leaves of Grass is no exception. It's not remarkably epic, but it's nicely complex and well-rounded.

Absolutely beautiful beer in presentation, scent, and flavor. Tastes like a dry cider with white wine notes and hints of citrus peel. Smells of freshly mowed grass and herbs.

Hazy yellow gold, nice white head, half finger. Awesome classic hf minerals, floral hops and light fruity Samson yeast. Taste is nice and tart. All the good stuff is there with some nice citrus juice and rind. Getting a little earthy grèn tea when i look for it. Lots of carbonation but fairly smooth. Bottle gushed a bit. Very nice. Burly man hugs for hoppypocket, cheers man!
