Keeping with the theme of dark beers landing on 4 in the series, this is a blend of five beers, aged between 8 and 30 months in oak barrels.

This one pours a dark brownish black color, with a small head and a bit of lacing.

This smells like berries, grapes, roast, Brett, oak, and chocolate.

I don’t usually like dark saisons much, but of course Hill Farmstead was going to nail this one. It’s got a very nice balance between dark malts and acidity/funk. I get dusty chocolate and light roast, plus red wine and funky acidic berry flavors.

This is medium bodied, crisp, and pretty drinkable, with a soft level of carbonation.

Of the 3 dark CDs that I’ve had - the 3 most recent ones - this one is the “weak” link. It’s still very good.

Finally found that “occasion” to open this beer - got thirsty for a HF beer. Go figure. Stored for a couple years in appropriate conditions.

Light brown hue with a minor effervesce. Little white head fades quickly. The brown hue speaks to the oak conditioning...or more likely brown is the color that emerges when blending multiple multi-hued vintages.

Aroma is green apple, oak, purple grapes and light cherry.

Dry, wine-like tannins and an earthiness beneath. Crisp and lightly tart. Balanced. Amazing with food.

Dark brown burgundy with a large beige head leaving tons of cobweb lace.

Smell is red wine oak with a little toasty char, cherry and grape gummies, and green apple.

Taste is almost like a sour brown, slightly nutty, except for a substantial lean into mature red wine, oak and tannin, with a hint of toasted cocoa and fruity grape, cranberry and cherry.

Body is medium with a nice crisp froth and a dry, red wine-like finish. This becomes exceedingly drinkable as it warms, becoming a tad less potent in flavor, and a bit thinner--both of which are developments that are quite unique to my experience with the style.

Originally tasted at DLD '17, but I have since had my own 2015 bottle on 9/26/17, so the review has been updated to reflect that more thorough experience.
