On tap at Hill Farmstead Gathering. Wonderful mix of bretts, oak, vanilla and dark fruits. The wine barrel seems totally appropriate here. Rustic flavors from the bretts blends nicely with the oak sweetness and the wine barrel sourness. This is definitly my favourite black saison.

A – Beautiful, especially in direct sunlight. Bright black/brown body with cola highlights. Bone-white, creamy head sticks with nice lace and solid retention.

S - This is everything I’m looking for in dark saison – darker notes of toffee and burnt caramel are held in balance by bright orange zest and bridged by a field of chamomile, honey and hay. A little more intensity and this is a 5.

T – Stellar. Bright acidity and tart white peach clear your palate for a gentle, sweet, burnt caramel. A memory of roast laces in and out of the profile, and a kiss of floral chamomile and lavender soften the on the backend. Stunningly balanced.

M – Super smooth with a nice carbonation.

O – Simply fantastic. One of the best saisons I’ve ever had.

Consumed 8-13-13, whole bottle minus yeast poured into a HF glass. Reviewed from notes.

A- Pours black with a lingering 1 inch head. Noticeable carbonation bubbles rising to the top. The head falls over a minute leaving a thin layer of mocha head with decent retention. Looks like it has good clarity, but the color makes it difficult to tell.

S- Brett, lactic acid. There is a sourness off the bat that reminds me of a flanders red. It presents with cherries, lemon and oranges intertwined, although cherries are the standout. A touch of vinegar as well. There is a phenolic note on the end, although it works well with the rest of the flavors. A touch of chocolate as well, but very subtle.

T- Cherry, raspberry, some coffee and chocolate too. Lemon-zest acidity. A touch of bitterness on the end.

M- Wow, this thing is dry. I feel like I just chewed on a chunk of chalk. Medium to high carbonation. Very drinkable on the get-go, but the insanely dry finish leaves you walking around shouting for water.

O- This stuff is awesome as is, no aging needed. Tons of fruit flavor, and very little phenolics. Definitely another hit from Hill Farmstead. Their wilds and saisons continue to blow me away one after the other.

This is the second batch sent through the coolship. Potential to be a slight gusher upon opening, especially I imagine with a bit more age (I watched as the foam came close to spilling over before quickly making for the the pour. I consider this good for the style and a good sign for the yeast inside). The pour gives a short lived tan head that dissipates to a ring around the rim of the glass. Good carbonation overall for the beer. The beer itself is black with slight brown when held up to light. Smell is slight with aromas of dark fruit and horseblanket. When consumed those flavors really come through with real astringent tartness of raspberry mixed in with some serious barnyard flavors. This is layered in with the oak coming through heavily to give the beer a good backbone despite the relative thinness.

Overall a very nice beer.

I am not sure that it really matches a lot of dark saisons that I have had. I am thinking of Stillwater - Saison Darkly or JP - Bam Noire which match lighter saisons but with that maltier umph.

Instead this has perhaps more similarities to the Fantome Extra Sour Dark, except where that beer really is mostly that funky horseblanket, hay, etc. going on this has a lot more backbone and is a more substantial beer, not necessarily more complex, just has more substance.

Final thoughts: This will be a great beer to sit on for some time. My next move will be a side by side to compare to Beatification to make some more in comparisons of the natural yeasts on each coast. Looking forward to more spontaneity from HF.

375ml bottle poured into a Lawson's snifter.

A: dark, a little darker than a brown ale. Moderate carbonation, very nice lacing.

S: smells like tart cherries. Maybe a little vinegar smell but not offputing.

T: Tart cherries also. Not as sour as I expected, which is nice. No vinegar here.

M: Smooth, left a wierd numbness on my tongue, kinda wierd. This beer is carbed perfectly for the style though.

O: a great barrel aged saison from HF. This is not my favorite style, and I'm a little worried how this would age, but I enjoyed it. Get it soon, and enjoy.

750ml corked and capped bottle poured into a Carton Teku.

A~ dark oak like brown with a huge fluffy head and a lot of lacing. Very surprising for it's age.

S~ dark tart cherries rush the nose followed by roasty dark malts, finishing with oaky wine barrel funk.

T~ a little less tart here, otherwise it pretty much follows the nose. I get a little burnt coffee and a lot of charred oak mid palette. Finishes where it started with a nice tart black cherry after taste that I never want to end!

M~ perfect carbonation for a saison! Smooth as can be, a little thick and very refreshing.

O~ this is surprisingly drinking great right now! Any more age though and I can see this getting a little watery like the early CD's seem to be getting. So drink it now if you have it! Less tart than the newest version but the coolship would explain that haha. I believe this is the oldest HF I've had, maybe...? And the only beer that HF has corked? Absolutely amazing for it's age! I really hope they do this again but slightly different every time. I'd have to say that "dark saisons" have to be my favorite hard to come by style. CD4, Edith, and this have blown me away. I love the complexity!
