Pale blonde colour, big white head with some lace left behind. Smell is quite fruity, apple and lemon, some orange, a bit of wheat and honey, lighjtly funky as well. Taste is fruity and tart, lemon and citrus fruit, dry with grassy flavours and a bit of dill also, the slightest suggestion of honey, funky with just a slight sourness to it. Dry spritzy carbonation, medium bodied. Solid stuff as was expected, however I think I enjoyed Arthur more but would certainly entertain this again wiothout question. (507 characters)

BOTTLE: Brown glass. Generally appealing label art. Unbranded silver pry-off cap.

Served cold into a goblet at low altitude in Austin. TX. Reviewed live as a saison. Expectations are high given the brewery.

No bubble show forms as it's poured.

HEAD: 1.5 fingers wide. White colour. Fairly creamy. Nice thickness. Retention is average - about 2 minutes. Leaves a light even coating of lacing on the sides of the glass as the head recedes.

BODY: Clear yellow colour of nice vibrance. Clean; no yeast particulate or hop sediment is visible.

Appears well-carbonated. Not unique or special looking. Has surprising clarity for a saison; not the hazy body you'd expect. I'm optimistic.

AROMA: Surprisingly hop-forward, with elaborate floral hop character, dried lime peel, sea salt, clean barley, neutral Belgian pale malts, and biscuity Belgian yeast. No alcohol, off-notes, or booze is detectable. Not real funky per se, but there's a hint of brettanomyces, sure. I'm not finding much barnyard or farmhouse character.

Aromatic intensity is moderate. Acidic, but not real sour or bacterial.

TASTE: Intricate notes of intriguing lime and lime peel steal the show here. The Belgian pale malt backbone is quite neutral, to its benefit, letting the subtle biscuity Belgian yeast steal the show alongside a kiss of funkiness. Not real heavy on barnyard or farmhouse character; I don't find hay or straw. Surprisingly hop-forward for a purported saison, with ample floral hop character and some hints of fruit.

It's not as intricate or deep as the best Belgian examples of the style, and to be fair it's anything but traditional with its filtered presentation on the palate and hop-forward flavour profile. Still, the build is quite cohesive and the balance is fantastic. Average duration and intensity of flavour.

TEXTURE: Smooth and wet. Light-bodied. Refreshing. Well-carbonated. Clean and filtered. Complements the taste quite well. This soft mouthfeel elevates the beer. Great presence on the palate.

Not oily, gushed, hot, boozy, astringent, harsh, rough, or scratchy.

OVERALL: Incredibly drinkable - which is its stand-out attribute. Traditionalists will decry its lack of sufficient yeasty funkiness and spice, but it has enough white pepper to satisfy me, and the lime peel alone will impress the discerning drinker. Absolutely worth trying, but not necessarily world-class. I've had better from Hill Farmstead, and I've only had 3 or 4 of their beers thus far.

750 ml bottle poured into a wine glass. Bottled May 2014. 6.5% ABV

Appearance: Pours straw yellow with 3 fingers of a white soapy head with nice retention. Body is hazy but still translucent, with some light visible carbonation.

Smell: Peppery yeast, honey, wheat, grass, slightly herbal, hint of citrus and funk.

Taste: Pear, tart citrus, peppercorns, wheat, honey, lemongrass. Not sour at all, but with a nice low/medium tartness throughout.

Mouthfeel: Light medium bodied with a somewhat soft mouthfeel and medium lively carbonation. Finishes dry and lightly tart.

Overall: Another great saison from Hill Farmstead. Well worth seeking out. (648 characters)

Bottle brought back by a friend from Hill Farmstead.

Pours a beautiful golden sunshine yellow, with a little bit of haze. A 2 inch head forms and clings tightly to the glass for a while, leaving some webby lacing.

Smells like honey, barnyard funk, citrus, and some wine aromas, even though I know it's not wine barrel aged.

The use of honey sets this apart a bit from the other Hill Farmstead saisons, and adds a nice dimension. It's tart, but not overly so, much less tart than the other Hill Farmstead saisons I've had. There's some dry hay and grain, honey, green apple, white grape, and some indistinguishable spice. I'm not good at picking out specific spices.

This is light bodied, and pretty airy on the palate, like a cloud, with a medium amount of carbonation, and a pretty crisp mouthfeel.

Yet another good Hill Farmstead beer. It's not quite on the level of their best beers, but it's still better than 98% of farmhouse ales out there. (951 characters)

Cloudy straw color...smells exactly how it tastes...moderately tart, lemony and peppery...every once in a while I'll get some sweetness that I assume is the honey fighting through...the flavors being moderate seem deliberate though and makes for superb drinking...typical chewy HF mouthfeel rounds it out and makes for a very nice experience and probably my favorite non fruited HF saison (388 characters)

A- Pale straw colored body with just the slightest hint of haze to it. Thick, foamy bone-white head.

S- White pepper, bready yeast, dash of sweet honey, some toasty grains.

T- Sweet lemony flavor cuts through the toasted grain and the earthy yeast. Not a ton in the way of honey, but there is some definite sweetness. More of a citrus quality to it for me.

M- Light, bubbly, tons of flavor with a sweet, tingly aftertaste.

O- Another nice saison from HF, but I do not get much honey. More of a lemony sweetness to it. (524 characters)

Yeasty and a little funky, this is an excellent saison. Different taste on palate must be the honey. (101 characters)
