Appearance: Slightly hazed straw gold with some darker gold at the edges. Head is bright-white bubbly head. Decent retention leaves a couple cm cap for the duration. Sticky layers of lacing. Moderate to lively carbonation on the pour.

Smell: Pale bready malt base. Some fresh white bread, crust and all. A touch of crackery snap. Honey is evident with a solid raw honey push. Some strong floral notes as well. House saison yeast pushes some mild spiciness with a hint of banana and fresh cut grass. Mildly lactic tartness on the front of the sip with some citric acid as well. Hints of lime zest. Slightly earthy with some herbal notes. Nice and soft.

Taste: Lemon zest with a touch of lemon juice. Malts are light and slightly bready with a pale malt sweetness. Raw honey adds some slight sweetness with a solid floral element. Some herbal notes as well. Mild lactic tart edge fades as it warms and pushes more citric. A hint of lime zest. Green apple. Powdery yeast. White bread crust. Damp earth. Some grass clippings and wet hay. Some white grape skin as well. Fruity and tart. Typical Hill Farmstead base.

Mouthfeel: Medium slightly fluffy body. Moderate carbonation. Slightly dry on the finish. Mildly effervescent. Clean.

Overall: It's just different enough to be interesting.

It's the same base as other Hill Farmstead saisons and the honey adds enough dimension to keep it interesting. Well worth the try and just a touch above the rest.

Glows el dorado gold in a hazy sort of way. Two fingers of billowing white head softly settle to a soapy pile leaving evidence of its passing all up and down the sides. Fantastic presentation.

Tart funky nose. Yeast and lemon and some fruits. Hard to pick out individual notes. Dusty.

Brings exactl what was promised: funky tartness runs along the surface, with a river of honey running below. I happen to eat an inordinate amount of honey in my day to day life (don't ask), and also enjoy it in my beers, so this really works well for me. The tart funk never gets truly puckeringly so, instead just opting to lend their flavours and step aside, ending a little more abruptly than I had expected. The finish carries that thick sweet body, but with a lemon bitterness leftover from the funk.

I just realized what it reminds me of: When I'm sick I always go for hot water with honey and half a lemon (and sometimes some garlic and/or ginger) as a remnant of growing up: my mom used to make it for me when I was a kid. That's what this kind of reminds me of, and why it brings back warm fuzzys even though this is the first time I've ever had it. The yeasty tartness veers havily into the lemon range, and the honey is pretty self-explanatory, so there you go.
