Thanks to Chris for this... A hazy dark honey gold with a big white head, fluffy with a good lace... Aroma is outstanding, sweet overall, light sweet grape juice, grape skin, sweet oak, a bit of musky oak, not saisonish... Taste is good but as great as I was hoping, a lot of the sweetness of the nose is gone, musky oak, very oaky overall, a bit bitter... Nice mouthfeel... Really good and worth trying but a slight let down after an outstanding start

Thanks to Chris for sharing this one.

A - Big white head with good retention that left some decent spots and lace on the sides. Hazy yellow-orange bodied beer.

S - Lots of barrel and funk. Big oak, brett, barnyard smells. Nice smelling. Has a mild vinous quality to it.

T - Some tartness, grapeskins, pale malts, brett funk, barnyard funk. Nicely complex, but I like the smell a little better than the taste. It's quite good and easy to get down, but I still hold Anna on a pedestal when it comes to HF saisons.

M - Little dry, lighter side of medium bodied iwth active carbonation.

O - A very good beer, I'm not a true fan of the stle, but this one was very good with a lot of stuff to pick out.

perfect for this time or year... not a day more not a day less. any of the inconsistent american qualities in a saison are eliminated in the additional conditioning in the wine barrels. this sort of gives it that subtle gin dryness and juniper note that is really some quite rare. but its like a delicate ghost on my palate. consistent nose though.

pour is golden cloudy with a cotton candy sticky head. rocky formation on the edge of the glass. nose of wine tannins and brett. hints of floral that are both juniper flowers and hop hints. palate is bright to say the least. and floral mineral that are like juniper hints at first that seems to fade. lemongrass bitter with a white grape tannins dryness. great for duck. lotus root salad. and i would even say perfect for ethiopian food.

750 mL bottle, poured into a tulip.

Pours a filtered, hazed golden straw color with a dense, frothy white head that initially fills the glass. Abundant lacing coats the glass and the head has nice retention supported by a consistent stream of bubbles.

Aroma is very dry, vinous and yeasty. Some residual sweetness with oak/vanilla, ripe grapes, and banana but earth and red wine dominate. Not much presence of spice or funk.

Smooth, medium-thick body. Soft, fine carbonation with a dry, oaky finish. Docking the mouthfeel a little for the finish which is very tannic and oaky.

Similar experience as Sean preceding me. Not as much wine as the aroma, more vanilla and woodsy oak. More brett funk comes through suppressing the fruity and yeasty sweetness of the aroma.

Another well made, good but not great saison from HF. I enjoy this more than the base Art I had a few months ago, but the wine barrel (particularly oak flavors) are a little too strong. Reminiscent of McKenzie's Saison Vautour and honestly a little more consistent in composition. However Vautour is still the standard I look for in this style of wine barrel/wild saisons.

Thank you, Chris! Poured into Bruery tulip.

A - Pours a darker golden color, white frothy head, thick white cap, nice sticking lacing. A wonderful-looking beer, if I do say so myself.

S - Wonderful brett funk, nice dose of oak and red wine, which all work together so well. Just an excellent-smelling beer...I'd keep my nose in it for a while if I didn't have to drink it (darn).

T - Nice funk, huge oak, touch of bitterness. Perhaps a little too much oak for me here, and the wine notes don't come through as much as they do on the nose. The funk is soft yet still adds a nice level of complexity.

M - Light, smooth and refreshing, good carbonation for the style.

O - The only thing I'm not excited about with this beer is the oak on the palate. It's just too "in your face" for me to say it's outstanding. I think it's a wonderful Saison and HF continues to make a wide variety of remarkable beers. Recommend.

Huge thanks to Chris (spycow) for sharing this gem. Served, appropriately, in a Hill Farmstead tulip.

A - Big white foam with excellent retention settles to a thick chunky cap, and splotchy lace. Hazed dark apricot body with a few specks of suspended sediment.

S - A delicious mixture of oak, bretty funk, tropical fruits, pale malt, spicy farmhouse yeast, and vinous notes. Is spice added to this? I get a mild saffron note. In any case it's delicious.

T - Taste is a bit of a letdown, although it's still quite good. More buttery oak and pale stone fruit malt character. Some vinous notes in the finish. There's a faint oxidation/mineral note that I found a little odd, so I'm not sure this is something that needs to be aged any further, although that might help in cutting some of the oak.

M - Smooth medium body, medium-low carbonation, and a lightly sticky finish. No obvious alcohol.

D - This is really quite excellent. Tons of flavor for the lower ABV, pleasant texture, and a superb aroma. Another quality Hill Farmstead offering and one I'd love to have again.

Incredible beer.

Opens with a big hiss, and pours with a voluminous, puffy head! The beer itself is a pale gold and fairly clear, with a very slight haze (perhaps from disturbed lees).

The aroma is really more that of a wild ale than a standard saison. bretty funk, lemon and lemongrass, some spice from both yeast and hops, oak, and far more. Deep.

The flavor is equally complex with a surprisingly firm bitterness, light citric tartness, oaky tannins, grape skins, hints of tropical juice, and sweet grainy malt. Rich in flavor yet light and moreish. Yum.

Mouthfeel is light and drinkable with high carbonation and just a touch of creaminess.

Overall, it's hard to say how impressed I am by this beer. Nearly inconceivable that something so complex and refined is being made by in one-year-old brewery. It reminds me a bit of Fantome, and that's a VERY good thing. Really wish I'd bought more of this, so I will need to get back up north soon.

On tap at the Blind Tiger Ale House during the Hill Farmstead event. This is the barrel-aged version of 'Arthur' the breweries traditional farmhouse saison. This was an amazing beer, that matches herbal hop notes with a subtle undercurrent of Brett. The oak characters really blends well with the wild yeast and fruity hop spiciness. I could drink this all day. outstanding!

Huge, huge thanks to sisuspeed for opening this bottle at the Rosso release. Served in a SAVOR snifter.

Pours a mild straw color with a really nice, fluffy white head that sticks around for quite a bit of time. Really nice lacing as it goes down. The nose is really nice with some complex earthy funk as well as grain and hay plus a touch of oak. Funk keeps coming, and also brings a hint of white grapes and mild stone fruit. The flavor is along the same lends, blending the funk with the base malt well and adding in slight fruit complexity. Mildly sweet feel is fairly light with a nicely dry finish. Really fantastic. Thanks again, John.

Poured into a Hill Farmstead tasting glass. A clear, straw-yellow body holds up a thick, foamy, white head. Each sip leaves some beautiful lacing on the glass.

Wet hay and earthy oak rise up from a few swirls of the glass. Light fruits and a touch of yeast spice on the nose. Faint white wine grapes and a light brett presence add to the complexity.

Dry, oaky, earthy malts mixed with light wine barrel fruitiness compose the taste. Faint orchard fruit, apple, hay and earthiness. Malts, yeast and barrels in perfect harmony. Exceptional.

Mouthfeel is earthy and musty with a touch of sweetness, but mostly dry throughout. Feels great for the style.

Overall, this is an amazing saison. Essentially flawless in every way. From the nose, to the flavor, to the mouthfeel, Shaun has nailed this one on the head. The wine oak barrels plus the house yeast make this a truly unique and exceptional saison. Probably in my top 3 for the style, if not my favorite. Highly recommended.

Poured into a Hill Farmstead glass, revealing three fingers of thick white head over a slightly hazy light golden body. Very pretty. Smells sweet and funky with a little fresh corn, wet hay and sunshine. Definite barrel presence on the nose.

Tastes smooth with sweet, toothsome, light maltiness and a hint of lemony freshness. A touch fruity, good barrel presence. Nice saison yeast spices. Crisp well water comes through on the clean finish. Mouthfeel is silky with a fine-nucleating carbonation that adds to the creamy but light mouthfeel. Very drinkable. Alcohol is not noticeable at all until you feel it in your head.

Overall I really like this one. Very light, refreshing, and perfect for the summer days.

Vintage 2011.

A soft pour into a tilted tulip immediately spurs a huge pillowy white head of four fingers. The head leaves massive, thick and large-bubbled lacing, softly settling into a finger and a half. The beer itself has mezmerizing clarity (like Anna) on first pour - the tangerine body is clear and luminous.

A nice bouquet of citrus, oak, and some mineral character. There's some wet hay and pineapple from the brett. The citrus runs deeply through it, with just a hint of sourness.

The oakiness gives way to citrus that's more orange than lemon in expression. There's a little bit of white pepper here, along with a constant mustiness and earthiness that envelops the citrus on the front of the palate and the minerality on the finish. A light sourness cuts through the must. The lingering bitterness on the finish whets my palate before the next sip. The tiniest bit of sulphur / rubber in the mid- and late-palate keeps this from a perfect score.

Medium-light in body with high carbonation (though the body feels slick and oily on the front of the tongue). Medium dryness on the finish.

This saison is drinking elegantly right off the bat, and I'm glad I opened this one early, since it displays such a restrained balance (though I would like to try it after the brett has worked itself more overtly into the beer). A very well imagined saison and likely my favorite to date. I need more of this.

A: Pours the color of apple cider, a light yellow gold with an impressive and mountainous four finger dense and frothy white cap that takes five minutes to recede to a smaller one finger version of itself that lingers for most of the session. The soapy lacing clings to the glass in thick clumps, curtains, and sheets. Perfect clarity. Amazing looking beer.

S: Ripe golden apples with a restrained musty wet leather Brettanomyces profile. Lightly spicy (peppery), with a touch of sulfur and mineral and a little oak. I detect some lemon and a low level of sourness. Quite complex.

T: Prominent notes of ripe Granny Smith apples accompany lesser traces of lemon and orange. Oak is well integrated, and spices maintain a peppery presence, adding complexity without dominating. Nice oak notes. Brett is well integrated, imparting lower levels of musty and leathery characteristics. Highly attenuated, with a soft malt profile and notes of earth. Bitterness is at a lower moderate level. Lightly tart with a low level of sourness.

M: Upper light in body with a high level of carbonation. Mouthfeel is spritzy, effervescent, and very dry, with a light acidity.

Overall: A very well crafted barrel aged Saison: complex, refreshing, and rewarding. Highly recommended.
