E is definitely not a Belgian IPA - it's a funky version of Edward (american pale ale) - fermented with brettanomyces, dry hopped with galaxy, and aged on stainless for four months. Basically, we refer to it as a farmhouse pale ale - a cross between a saison and an american pale.

2012 Release: Aged in Mimosa barrels.
2014 Release: Aged in wine barrels with resident yeast and microfloa for 1.5 years.

Bottle shared with bstyle, poured into a Hill Farmstead tulip (10/2012)

Pour: Hazy golden orange, with a massive three finger white, soapy head. Head is super thick, and hangs around to a long time. This heavy lacing.

Smell: Starts with an earthy funk, followed by some bready yeast, pepper, and citrus. Some lemon zest and clove in there.

Taste: E. has really started to brett out. Earthy funk right off the bat, followed by some citrus zests. Biscuity sweetness mingles with peppers and spices. Clean and bitter on the finish, with a substantial amount of earthiness.

Mouthfeel: Juicy, yet dry. The funk own the mouthfeel as well. Really quite refreshing, and the best part of this beer.

Bottle poured into a Hill Farmstead stem (4/5/13) - score based on this review!

Pour: Hazy, bright pale orange with a giant three plus finger white, foamy head. This bottle was an excessive gusher right away. Some sticky lacing, and the head hangs around the entire glass.

Smell: Big, bright, tropical brett. Lots of pineapple, mango, grapefruit, and papaya. A touch of earthiness, and a very light funk. Some saison like qualities.

Taste: Really tropical fruits up front, with more pineapple and mango, and some grapefruit. A nice bready sweetness. Not much in the way of funk, but a definite mild earthiness. Finishes juicy with the tropical fruits from the start.

Mouthfeel: Slightly tart, but only just. Really crisp, and despite the excessive gushing, not overly carbonated.

Overall: This beer really evolved in the 6 month span between the times I had it. I definitely enjoyed it with more age.

Pours out a compilation of golden and yellow tones with some lighters straw hints around the edges. Super volatile pour, even being somewhat conservative creates a head that grows thicker than the amount of beer that's been poured already; eggshell-white, cloudy, and foamy, leaving huge chunks of lacing as it slowly recedes.

I bring E. up to my face and I'm met with a huge bouquet of roses; the aroma is largely floral, comprised of fresh, wet roses and bitter grassy notes. The hops are clearly the key component in this one. Successive whiffs reveal a more refined hop character, rounded out with tones of earth, dirt, and musk. Light hints of funk and wet wood (as well as some of the musk) is probably from the brett yeast used. There isn't much to be said in terms of malt, at least as far as the aroma is concerned. The hop profile here is certainly different - one of the most purely, raw, floral things I've smelled in quite some time. Very, very light tropical fruit and citrus peek in more and more with each sniff - maybe apple skins and/or pears?

I take my first swig of E. and I'm not sure if I just drank a beer or if I ate a flower and a handful of grass. There should be no surprise, however, as the aroma was largely floral and grassy. The vegetal notes are pretty huge on this one; grass, roses, and perfume. The hops are raw and dirty, giving off a very weedy, grassy, and bitter tone. They must have used a ton of bittering hops on this one - the bitterness charges in, rides the wave hard, and doesn't come close to being settled by the end. I would have like more aromatics to accompany this dry, leafy bitterness. A mild citrus zest sits quiet in the background, but never jumps out and strong as I was hoping for. There's a heavy bit of funk and wet oak in the aftertaste - hard to pick it up throughout the sip, as the hop notes are so profound. Medium bodied, heavily carbonated.

Hm... I don't love E. like the scores and reviews said I would. Listening to others describe it, it definitely sounds like something right up my alley. Don't get me wrong - it was a good beer, but I guess from the way people talk about HF, I was possibly expecting a bit too much. I like the funk and oak in the end, but the bittering hops just don't make my palate dance like they should. Either way, still a solid brew, but likely nothing I'll seek out again.

750ml bottle poured into a HF wine glass.

Pours a clear orange/amber color with a huge white head, very sticky and pillowy with a ton of nice lacing. Nose is a bit funky and maybe some bret? It reminds me of a hoppy Orval or houblon chouffe, very nice.

Mouthfeel seems a bit light, carbonation is there but not quite as big as I was expecting/hoping. Taste though, does not disappoint. Very hoppy and citrusy with yeasty Belgian spice that is very well done and balanced.

Congrats on one year!

750 mL bottle poured into a tumbler.

Appearance - Not sure if I should rate its appearance well. It's a hazy orange with a huge off white head. It slowly oozes out of the bottle pushing gunky crap with it. Sticky lacing.

Smell - Extremely bretty, but lots of flavor behind it. Still some hops there. Lots of citrus.

Taste - Earthy and very bretty. Mimics the nose almost identically. Citrus more prominent. Lots of earthiness in the finish. Slight bitterness.

Mouthfeel - Medium body. Well carbonated but not overly so.

Overall - Arguably better than Mimosa. Has more complexity than Mimosa because of the fresh hop character.

Bottle: Poured a hazy pale yellow color ale with a large foamy head with good retention and some excellent lacing. Aroma consists of pungent herbal hops with loads of funky notes and some rustic malt also discernable. Taste is a unique and funky mix between some herbal and floral hops with pungent notes with some rustic malt and light residual sugar notes. Brett is well dosed and hard to distinguish. Body is full with great carbonation and no apparent alcohol. This beer made for a very nice Christmas eve treat.

Pours a huge and hazy dark orange color. Huge fluffy head. Nice retention. The aroma is nearly brilliant. Bubble gum, yeast, citrus, nuts lemon, and sweet orange. Sweet citrus on the taste, some lemon, citrus hops, light malts, bubblegum, and some breads. The feel is lik, crisp and carbonated.

This is an epicly enigue farmhouse ale. Lovein' it!

A-Cloudy pale orange, two finger head that leaves nice lacing.

S-Oak, white wine, lemon and grass. tart notes yeast and wheat.

T-Very white wine flavor, oak as well, nice tart notes, oranges, lemon and grass.

M-Lighter drier finish, nice carbonation.

O-Didn't get much of the hop flavor but still a good beer.

Aromas begin with a substantial amount of tropical fruit and other lighter fruits like green apple and grape skin. Next I get the yeast induced aromas of earth and light spice along with a clean light crackery, pilsner malt base. The Bretty must and funk emerges more and more as it warms.

The tastes follow the nose with light crackery breadiness and then some earthy, slightly musty and funky yeast flavors. The tropical and citrus fruit hops pop next with some passionfruit and lemon and orange peel. Some phenolic spiciness with light sour citrus and other non-discript fruitiness. The oak and rustic funk emerges more as it warms as well.

The mouthfeel is medium boided with medium carbonation. Finish is lighly dry and oaky but mainly clean for the most part with balanced funk and hop bitterness as well.

Overall I really enjoyed this beer, I wonder what it was like when it was released fresh as the hops were probably super aromatic where here they are more of a complement to the Bretty and funk but now the Brett is probably better than it was earlier this year. A fine line for sure but regardless this was a super solid beer from Hill Farmstead and would gladly revisit if it was more readily available or even easier to trade for.

Huge thanks to Tom10101 for picking up and sending out this huge want.

A: Copper yellow haze topped with 3 fingers of white foam and settles down to a single layer across the glass. Streams of carbonation race to the top, suggesting a snappy carbonation.

S: Lemony dank basement with muskiness, yeasts and wheatiness topped with some minerals. Finish is a little acid and as it warms some notes of under ripe banana.

T: Lemony acidity with sourness of grape skins and brett funk. Wheaty notes with medical herbal notes and chalky minerals.

M: Light to medium bodied with a soft carbonation combined with light crisp tartness.

O: A refreshing and tangy drink grounded with funkiness and wheat. Light and refreshing it holds nothing back in the tart and sour department and never plays down to a crowd looking for something sweet. Bold and assertive.

I decided to drink a whole bottle of this tonight. Second time I'm having E., first time I'm reviewing it. 2012 vintage, I bought it at the brewery last August.

A- Like most beers that I've had by Hill Farmstead, it has quite the head on it. Not nearly as much as the first time I had this, but I still had to pour pretty slowly to minimize it. It's a bit cloudy, and golden-orange in color.

S- Smells delicious. The first scent I get is peach to be honest, followed by orange and more citrusy fruits. The aroma has some hops to it as well, but they have definitely died down in the 7 or so months this had been aging. It has a nice floral scent as well, like fresh picked flowers almost. Just a great, sweet aroma.

T- It has more hops to it than I initially thought it would, but once that dies down that fruitiness really comes in. Peach, pineapple, orange, and those are just to name a few. It's slightly tart, but I definitely would not consider this a sour. It definitely is not as sour as most of their other saisons.

M- Loads of carbonation on this one. It almost slightly gets in the way of the flavor because there is so much happening on your tongue.

O- This is just another amazing saison by Hill Farmstead. They are by far one of my favorite breweries, if not my absolute favorite. I have to admit that the first time I had E. I wasn't overly impressed with it, but it really has aged nicely. It's my least favorite saison by Hill Farmstead, and I'm still giving it a great rating. Goes to show how good their stuff is. I'm going to finish this one, Happy Easter everyone and God Bless.

2014 Vintage
Not among my favorite Hill Farmstead beers, but this is still a really nice Saison. Great mouthfeel; light, crisp, lively, and dry. Pleasantly musty aroma with pepper and tropical fruits from the Galaxy hops, tho I'm sure this has faded a bit by now since bottling. Taste is oaky, bitter, and citrusy with a strong floral/grassy bite. Wish I'd had a fresh one to compare it to. A good compliment to a funky Stilton and some terrine.

E. pours a light bodied, very, very cloudy tangerine orange witha three finger, root beer esque foamy bright white head. The nose is very dry, full of Brett, with a moderate fruitiness. It drinks really dry with loads of Brett and almost a grapefruit like fruit presence. Its funky and has plenty of barnyard characteristics. It's interesting, just very dry. It drinks light and smooth. I like it but not nearly as much as I like Anna.

Bottle thanks to Urbancaver. Hazy golden pour with kick-ass lacing. Aroma is definitly hoppy, very funky (lots of bretts). You can also feel the white wine barrel. More bitter than expected crushed by funky bretts and a splash of citrus. On top of it, bready malts for taming purposes. Full bodied with lively carbonation. This is a multilayered masterpiece by Shaun, once again succeeding in incorporating many different flavors harmoniously.

On tap at the Hill Farmstead Anniversary Celebration. Served in a Hill Farmstead long-stem tulip.

Pours a bright yellow-golden color that is mostly clear with a really nice white head. Loads of foam and lacing. Early pour from the keg that was mostly foam to start, but really nice retention. The nose carries a good dosing of funk along with some light floral hops and a good dosing of stone fruits. Some citrus as well. Nice funk throughout. Really really nice nose. The flavor has a moderate amount of funk and good hop flavor, but doesn't quite hit the level of the nose. Body is dry and funky with a good background bitterness. Dry finish. Light body. Delicious.

Update. Bottle batch two on May 14, 2012. Citrus, funk, and all around near perfection. Similar to batch one but taken up a notch. Brett mixes so incredibly well with the underlying beer and the hops add another layer. As close to perfection as a beer can get. Absolutely stunning.

Bottle a Armsby Abbey during Hill Farmstead beer dinner.

Huge fluffy rising pillowy head hits multiple fingers and fades very slowly that layers the entire glass with lacing, hazy nectar orange colored beer.

Nose has lots of funk with farmhouse, quite Brett like funk, little citrus hint orange peel and lemony. Little wet hay like and grassy, little lemony fruit citrus hops, light spicy hops, plenty of barnyard funk.

Taste starts with nice funk, farmhouse yeast and barnyard Brett funk. Light citrus with little orange peel and more lemon like hops. Funk brings light grassy hay, hint of floral saison spices, light bready malts. Hops bring a nice bitterness, light spicy hops and a bit of orange tangerine citrus. Finish is dry and quite bitter and funky long lingering finish.

Mouth is med bodied, fluffy with lots of carb.

Overall fantastic!

A - Orangish yellow colored beer with a really big head that foamed up for a long time. Lot of stick on the sides.

S - I really didn't know what this beer was when I smelled it, for some reason I was thinking saison. There was quite a bit of syrupy fruit and a heavy dose of yeast.

T - Very heavy taste, it's kind of a yeast explosion with a lot of syrupy tropical fruit. Not particularly bitter. It tastes good, but the yeast is a little too much for me.

M - Lighter bodied with a lot of carbonation. Fairly dry.

O - This is a good beer for something that is a bastard style. It's just not a style I think is particularly good, and the phenolic quality of the yeast makes it hard for me to drink in large doses. Would like to try this one again though.

poured into a pair of HF wine stems.

Appearance: light orange bodied beer with 3 fingers of white head that slowely drops down to thick cap. Great staying power on the head with thick yet spotty lacing left on the glass.

Smell: This one is modertely funky. Lots of white wine barrel notes that are overpowered by the funk. Fruity hops with low bitter aroma.

Taste: Moderate funkiness. Surprisingly enough the white wine notes are not very strong compared to the nose. Light tannins and white grape. Lite bitterness from the hops. Musty and rotten hay.

Mouthfeel: medium bodied beer with moderate carbonation. As this beer warms up it seems to get watery, but still pretty solid mouthfeel.

Overall: This is my first wine barrel aged pale ale. It was done in true HF style and its a great beer. Unique and different!

Lemon, crisp, earthy. Very light Guezue like flavor on the back end. Super short, dry finish. Really wish I drank this fresh. Getting no hops except in the aroma.

At Capone's today...

The beer pours a golden amber color with very good head retention and lacing. The nose is very impressive and complex, showcasing citrus, light clove, considerable funk and slight sour. The flavor profile replicates the nose in this dry, hoppy, Belgian IPA, and I'm impressed by the melange of flavor I get. Mouthfeel is light to medium bodied, with a hoppy, bitter, funk infused finish. The alcohol is barely noticeable in this excellent beer.

Poured a very cloudy, hazy, orange. HUGE 4 inch head even with a very cautious, slow pour. Settles to a 1/2 inch fluffy white head with thick, chunky lacing.

Bready yeast dominates the scent. The funkiness is in the background. I LOVE the way IPA smell and with the added funk, the aroma is a winner!

The taste is good. If it were considered a 'true' Saison, I'd probably rate it lower, but being a bretted IPA makes it hit the mark. It isn't my first choice in style, but it is very good. First taste is of mostly bready. Once past the breadiness (is that a word??) you get hit with a fantastic funk fromthe Brett. Then a smooth, tart finish.

It is a medium body and on the dry side.

I reslly enjoyed this beer and the IPA w/ brett thing...but I prefer a more traditional saison. That being said, I'd never turn this away. Really enjoyed it and glad to have had the opportunity.

A - Pours a pale, cloudy light orange with an explosive fine-bubbled, near-white head that takes forever to fade down.

S - Funky, citrusy-lemons mostly.

T - Lemons, funk, slight wood.

D - Great carbonation and a light body.

O - A funky, lemony farmhouse pale ale. It's been awhile since I have had a HF brew, and man do I miss them.

**Batch 1**

Moderately orange with a dense, off-white head with good retention and nice lacing. The nose is excellent. A nice Brett character is present, but as it warms up, it grows increasingly clove and plastic-like, along with some herbal character (cilantro stalks). The dry hop character has fallen off. Still, this is nice. The palate is significantly better than the nose would suggest. Opening grassy with some clove and a little plastic, there's plenty of Brett flavor. Mildly fruity as well, and a touch spicy too. Drying, yeasty, mildly cheesy, this is nice.

**Batch 2**

Orange with a thin, white head with excellent retention and lacing. The nose has more of a fruit character than batch 1 did, with an aroma of cantaloupe and mango, along with some dry hops. Faintly clove and plastic like, with a little bit of sea breeze, this smells excellent. The palate is a little less complex, a little more watery and a fantastic balance and blend of flavors. Nice dry hop character. Drying, long finish with mild clove and citrus, this is excellent.

Presentation: 750 mL bottle chilled and split with a friend. Poured into two Sierra Nevafa tulip glasses. Even after chilling, this gushed a little, but almost all of it made it to the glasses.

Appearance: Completely opaque bright orange to yellow in color. Really large sticky head that recedes pretty quickly.

Aroma: Big orange zest and funk notes upfront. Green apple and citrus juice provides a really nice backing. The hops are definitely present there as well and provide an interesting contrast.

Taste: Bitter pine notes from the hops really take over more here than in the aroma. A light backing of citrus zest and funk does well to balance the bitterness. A really interesting combination of pale ale and saison/wild ale. It works very well together in this case.

Mouthfeel: Light bodied and spritzy. Very refreshing and bright.

Overall, a really nice hoppy saison / wild ale. Completely unlike other farmhouse pales I've had. The aroma really highlighted nice citrus and the Mimosa barrel notes really stood out. I look forward to having this again.

Poured a hazy light orange with a huge white head that takes a while to settle. Settles as a nice rocky cap leaving good lacing.

Nice scent, bright fruits of all kinds (green apple, citrus, peach) with a bretty hay feel.

Taste doesn't quite live up to the smell but still good. The Belgian-ness takes over a bit more with a good dose of oak, brett, farmy saison yeast. Light funk and fruits.

Mouthfeel felt a bit thin and light to me.

This was a good beer to kick off the fest with. It feels more like a saison than a Belgian IPA to me. Light, interesting, good beer.

Batch #2 bottle shared by Shaun Hill during Philly Beer Week.

A - Pours slightly hazed golden yellow with a nice one finger tall white head leaving spotty trails of lace down most of the glass.

S - Smells of damp earth, musty funk, spicy belgian yeast, and a nice strong fruit aroma - mainly apples and oranges. The hops are there but the other aromas drown them out a bit.

T - Starts off with the musty funk and wet earth from the aroma combining with the bready yeast and light spice to form the saison base. The fruit and hops come through toward the end of each sip, leaving the palate dried after each sip.

M - Light, smooth body with moderate carbonation. Nice crisp feel with a dry finish.

O - I only got a sample of batch one but I thought it was pretty good. Now that I got to try a proper pour I can really really see what this one is all about. The flavors work very well together and make a really awesome beer.
