Huge thanks to Deuane for busting out one of his bottles for us to try at the last monthly tasting. Another long time HF want bites the dust!

A - Pours hazy bright orange with a beautiful one and a half finger tall white head, slowly dissipating down to a light film, leaving sticky webs of lace on the sides of the glass. Beautiful looking beer.

S - Smells of orange zest, woody oak, bit of wine spritzer, good amount of typical HF saison funk, dash of earthen mineral and some wet hay. Some of the orange has definitely faded away but it still smells amazing.

T - Starts off with a mix of earthen mineral, wet barnyard hay, light funk and oaken wine quickly being joined by the orange zest and pulp and some bready malt helping to back up all of the other flavors. Finish is pretty dry, not lingering for very long after the finish.

M - Medium-Light body with moderate carbonation. Smooth, juicy feel with some nice backing funky earth that keeps me coming back for more.

O - This has aged beautifully well. The fruit has definitely fallen off a bit but the fruity/funky yeast has made up that gap. I would have loved to have tried this one right when it came out as it is just marvelous right now. Thanks again for the share Deuane!

Reviewing the infamous Mimosa from the Hill Farmstead Brewery out of Greensboro Bend, Vermont.

Winter 2011-12 vintage, bottle #047/450. served in a Cantillon wine glass and enjoyed on 05/10/14.

Appearance: Pours a murky, orange color body with a light fade to yellowish-orange atop. Pours a half finger of white head that settles to a thin coating. The beer has a nice color, for what little that matters. 4.5/5

Smell: Wine and orange citrus dominate the nose. This beer smells just like a mimosa mixed with some straw and a kiss of a fruity yeast aroma. 4.5/5

Taste: Super juicy citrus without being overly acidic mixed with mildly tannic white wine. Light farmhouse funk/Brett on the finish, particularly as it warms up. A touch of pepper on the finish too. More complex than the nose, developing as it warms. Good, lasting flavor. Tastes just likes its namesake, with delectable complexity and saison-like characteristics coming through on the finish. 5/5

Mouthfeel: Medium bodied, appropriate medium carbonation. Unreasonably juicy mouthfeel, with a very light dryness to the finish. Not very tart, but not "not tart enough." Excellent balance, really digging the sheer juiciness of this mouthfeel. 5/5

Overall: Tastes like a mimosa spiked with saison characteristics on the finish. Refreshing, flavorful, and complex for what it is. This beer is a marvelous interpretation of its namesake, and the perfect token of Hill Farmstead's competence, talent and ingenuity when everything goes right. If you want to know why Hill Farmstead beers are so highly regarded and sought after, look no further than this brew.

750ml bottle #179/450 poured into a Hill Farmstead oversized wine glass.

A~ glowing light orange that goes from a dark coppery orange hue at the top and slowly fads to a glowing neon orange at the bottom. nice fluffy white head and a real lot of lacing.

S~ crazy citrus, soooo much orange! along with pineapple, lemon, lime, and a little bit of grapefruit. followed by a nice hop presence which i'm surprised is still there and which also definitely adds to the citrus. everything leads into some nice peppery saison yeast.

T~ holy yessss! follows the nose with overwhelming citrus all around! some bitterness from the hops crash your pallet with amazing over tones. followed by some wheat characteristics, peppery, bready yeast that all seem to come back to the best orange juice ever! finishing up with some nice lemony oak wine barrel tartness which i'm sure has matured since the release. oh and no booze at all for 10%!

M~ soooo smooth and amazingly refreshing. has that pineapple juice feel that reminds me of Juicy. oh... i don't think i have to say it but the carbonation is outstanding!

O~ yup i had high expectations and they were still exceeded. amazing brew all around! that mouth feel of pineapple juice aka Juicy is so in your face that its literally like this beer was made with half Juicy and half of an actual mimosa haha. best saison i've ever had? yeah i'd say so lol we can prey that they release it again cause i definitely won't get another bottle but you all know it won't be the same! HA!

Big thanks to the best BA in all of the IC Husker Mike. Maybe we need to call him Hawkeye Mike due to his attire change last night?

This is a total taste mindfuck. Because on the front end you get funk and then on the backend you get citrus on the tip of your tongue even though the beer is halfway down to its destination. Talk about a total screw!

From notes. Poured from a 500 mL bottle into a tulip.

Mimosa has a full golden orange color with a off-white cap that retains nicely and leaves spots of lace all over the glass.

The malt in the nose has a light and dry crackery feel. There is a ton of orange and lemon citrus, with some tropical fruit as support. After that some Brett comes into the nose, with some funky and musty notes.

The flavor is not really dry at all. It has a biscuity malt presence, a ton of juicy citrus zest, and a tart citrusy finish.

The body is full for the style, with an above average carbonation. It is much juicier than a normal saison, with citrus and tropical fruit notes contributing to this sensation. There is a mild acidity that comes from the citrus.

Overall I enjoyed this more than any other HF saison.

Cracked into a bottle of Mimosa for my 30th birthday with two good friends, sampled as the sun was setting over the lake at my buddy's camp. Not too bad.

This beer is awesome. As with so many of HF's barrel aged saisons, it is a testament to balance and artistry in brewing. I'm an absolute citrus fanatic so this beer is right up my alley from the start....

Appearance: HF saison, golden and glowing. Less head than say an Arthur, fades on the quicker side. Awesome.

Smell: If I could just smell this beer, I'd prefer that over drinking many other beers. Orange, funk, greatness.

Taste: !

Mouthfeel: Great.

Overall: I can't imagine much else better than this. I'll make every attempt to get more and more of this beer. Here's hoping either this beer is brewed again, or some other Imperial saison with citrus addition is crafted by Shaun Hill and the team at HF.

Like others have said, this beer is like a ramped up Juicy. Just perfect, and it's aging VERY well.

A - Hazy orange with a big foamy head to it

S - Orange and lactic acid that gives it a nice sharpness. Slight blue cheese funk and champagne yeast

T - Orange juice, tart orange zest, lots of blue cheese funk and oak. Light lactic acid on the finish. This actually tastes just like a mimosa if it was sour and funky.

MF - Good carbonation that leaves a tingle. Dry finish

O - Really good and interesting beer from Hill Farmstead with lots of funk that gives it a good blue cheese presence to it

Appearance - Hazy orange. Bright orange. Nice white head.

Smell - Orange and brett are the most dominant. Some grassiness and hay. Pale malts.

Taste - Much more orange. More winey. Strong pale malt. Very bretty and earthy. Lingering orange flavor in the finish and just a touch of bitterness.

Mouthfeel - Medium heavy body. Slick. Bretty in the back with a touch of earthiness and acidity.

Overall - It's not life-altering, but it's pretty damn good. Brett is getting a bit strong and masking other flavors.

Bottle at my Saison tasting with buds. Crazy thick red wax was tough to get thru but managed with a sawzall and a blowtorch. Shared all around with the crew. Poured into my HF wine glass with a cloudy golden hue. Offered up tons of carbonation and an aromatic fluffy head. First whiffs were of a pretty funky brew for a saison - with hints of straw, citrus and orange peel on the nose. Flavors were bready and slightly herbal, with a citrusy / lemon tingle and a drying finish. Soft on the palate. Great beer - though not up to the expectations put on it. Still - a very nice brew and a treat to try.

Bottle #077/450, poured into a Hill Farmstead stem.

Pour: Hazy, glowing orange with two and a half fingers of white, foamy head. Head hangs around for a while, and leaves some great sticky lacing. Definitely a radiant looking beer.

Smell: Huge burst of orange juice and funk up front. A nice clean bit of lactic tartness comes through in the middle. A distinct bready, saison quality provides some depth. Nose ends with more of the recognizable Hill Farmstead funk.

Taste: Starts with fresh squeezed orange juice and orange peel, and immediately mixes with a lactic tartness and some barnyard funk. A doughy sweetness in the middle. A really light white pepper and a tough of oak. Finishes with a lactic orange tartness and some more funk.

Mouthfeel: Insanely drinkable. Really refreshing, and incredibly juicy. Not particularly dry, but there is some character there from the oak. Pretty tart, but not sour.

Overall: Mimosa definitely exceeded my expectations, and they were pretty high to begin with. Not the best Hill Farmstead I’ve had yet, but pretty close. It reminds me of Art with loads of oranges.

Thanks to JAXSON for this bottle.

Appearance: Mimosa pours a moderately hazy golden yellow, with a gentle pour yielding a massive white head. The head lasts really well for a 10% sour and coats the glass in beautiful patterns of sticky lacing as it slowly recedes.

Smell: Wow, this actually smells like a Mimosa - albeit a slightly funkier version. Orange and dry white wine dominate the initial aroma, but a little warming allows some other notes to become apparent. These include: A distinct bretty character (almost barnyardy), oak, old wood, old dry grass and some sweeter fruits (peach and a hint of granadilla).
There is no trace of the 10% noted in the nose.

Taste: As with the nose, the flavour is dominated by big citrus notes, with white wine, oak and some brett character (almost horsey) also present. As the beer warms a light sweeter fruit character is noted, alongside notes of dry grass, sweat and a hint of hops. Warming also adds some alcohol character that seems to clashes with the brett.
The flavour is lightly tart (I was expecting it to be a lot tarter) and the finish is very dry.

Mouthfeel: Medium bodied, with a high level of soft carbonation. The combination of the mouthfeel and the fresh citrus flavour made this a fantastically refreshing beer for a hot summers day.

Overall: Mimosa is a really tasty wild ale, but is a little one dimensional in the flavour department. I would love to see how this one develops with age, but I can't see it ever being worth the price!

2011 vintage, bottle #140/450. Generously shared by - yep - cbutova. Originally had on 12/7 at a tasting.

Another Hill Farmstead gusher! Foams out the bottle, luckily not much lost. The appearance is pale hazy orange, foamy white head retains pretty well.

Tart fruit and bretty bugs dominate the smell. Good strength, a little on the simple side.

It does pull off a decent mimosa feel. Tart and funky orange juice instantly comes to mind, lots of tart light fruits in general (lemon, grapefruit). Some farmy funk, wheat, some oak. Not too much of a wine presence to me here but some white grape noticeable here and there.

Very light and easy drinking for 10%, hard to believe the alcohol content is for real here. High carbonation and very tart, moreso than expected.

A pretty crazy beer - huge orangey bretty saison - drinks way too easy for 10%. Though very enjoyable I don't think I'm as crazy for it as many others are.

pour is hazy yellowish orange with a tight creamy white head. Nose is heavy citrus, faint Brett leather and a touch of musk. Taste is also heavy citrus and tropical fruit, a touch husky and notes of musk. Very fleshy orange, alcohol shows in back, slightly fusel and a bit sour. Body is well carbonated and fairly dry, not too heavy but not light.

Pours a .5 finger white head with great retention. Beer is a pale, slightly cloudy yellow. Stringy lace with good stick. Excellent appearance as always.

Nose actually smells a lot like mimosa. Big orange notes with a sweet, champagne-y spritz and a health helping of funk. Appetizing and very unique.

Opens orange rind, slight hop bitterness. Yeasty. Sweet and tart citrus throughout with notes of cane sugar. Finish is aggressively yeasty with a slight hop bitter presence. Aptly named as this one definitely reminds me of my favorite brunch beverage.

Light bodied with moderate carbonation. Smooth and oily in the mouth and slick and aggressive going down. Sticky, dry finish. Solid. Amazing how well the ABV is hidden here.

This is a solid beer overall but honestly, from Hill Farmstead, I expected a bit more. Sure, it tastes and smells like mimosa but not a particularly good mimosa... and only a decent wild ale all things considered. Like I said, this is solid but by no means a standout from the brewery. A bit overhyped.

Second and last bottle of this gem. About 10 months old at this point and starting the night off for my 1000th review celebration, this is #998.

Bottle bomb foams up and gets all over the table. I guess that isn't a total surprise with some wild bugs in a brew.

A- Poured into five pint glasses for a tasting with a big foamy white head. The head forms to a huge size and has nice retention. Body is a golden orange with a fair amount of haziness going on. Tons of thick lace all around the glass in random patches.

S- A big blast of white wine, orange zest, orange juice, saison yeast, lemons and tart hints. You can tell there is individual elements from yeast, barrels, wine, wild bugs and added fruit but it all blends very nicely.

T- The citrus, wine and funky bugs all show up very nicely still with a bit of age. Massive orange and lemon flavors, which remind me of both the flesh and the zest of each. The wine from the barrels is very apparent with white wine, grape and oak notes. A great level of tartness is here and there is just a bit of barnyard, spicy/grassy funky flavors. Saison yeast rounds it all out with more spicy, peppery and fruity hints.

MF- Light and dried up body sort of reminiscent of a lambic or Gueuze. Carbonation has that foamy feel but is crisp and goes nicely with the flavors at hand. Big tartness and some spicy bitterness (like citrus rind tends to be) in the finish.

Very complex with a huge range of influence. It seems like citrus flavors come from the fruit, wild bugs and the saison yeast which rules. I really like how the wine flavors work into the mix too. A Hill Farmstead brew to really remember.

The beer is golden orange with a soft white head. The aroma brings oranges, orange peel, wild yeast, funk. I thought the flavor was excellent, though I happen to love citrusy beers, especially sours, saisons, IPAs, so perhaps I am biased in favor of this citrus delight. Mild acetic presence. Alcohol presence is masterfully hidden. Highly enjoyable and drinkable. I would love to have this again.

First bottle I've had time to think about, 750 mL, red wax, #332, 2012. Thanks Tucker and Ashley.

Pours a slightly hazed, clear golden orange with a few fingers of frothy white head that fade to a collar and thin webs of lace. Small stream of bubbles support a thin film. Geuzue-saison hybrid with orange membrane on the nose. Mineral and brett, farmhouse hay, mild citrus sweetness and funk. Thicker side of medium body with a lactic acidity on the back of the tongue. Flavor has a strong citrus rind and membrane flavor, not overly sweet as the mineral acidity and bretty funk overwhelm it. Slight touch of rubbing alcohol comes through in the nose as it warms and the body grows more syrupy. Very nice, but not quite as enjoyable as Ann.

Beer pours a hazy yellow-orange with a fluffy white head. Looks like a Hill Farmstead beer! Smell is not quite what I expected, but is damn impressive nonetheless. It's got a hint of citrus, but it's a lot more gueuze-y than I thought it would be. It's oaky and funky plus it's got some lactic sourness in there. Flavor is very interesting, a bit like a saison blended with a gueuze with a good amount of orange in there. Not exactly like a mimosa, but I certainly see the similarities. Unfortunately there's a bit of a mineral flavor that keeps this beer from being as amazing as I'd hoped. Mouthfeel is also a bit on the heavy side for the style, likely due to the fact that it's 10%, but the nice carbonation mostly saves it. Overall, this is a tasty beer and an interesting experiment, but it doesn't quite live up to my lofty expectations.

A: Pours a hazy golden-straw body. Well carbonated, it produces a frothy off-white head that rises to 2 fingers and leaves sticky lace as it falls.

S: This has the minerally, lemon-zest/hay aroma of brett that couples well with orange rind and a small lactic sourness. A small pepper note.

T: Very orange-forward, both in flesh and rind. Again, there is a light lactic sourness that is more of an accent than anything; it takes a second seat to the brett, which isn't particularly strong either (don't expect the mushroom funk of aged Drie Fonteinen gueuze). Rather, it has a balanced, minerally, hay, earthy flavor that accentuates the citrus rind. White pepper in the finish.

M: This is medium-bodied, with appropriate carbonation. I'd like the beer to be drier; it had some heft to it, but I expect that the beer might dry out as the brett goes to work. But I imagine it needs that body to hide the alcohol (10% WTF?), which was completely undetected.

O: I know the beer people go apeshit about is Ann, but I thought Mimosa was better. Partly because I had in my head that Ann would be a successor to Saison Lambic Pinot Noir (which I loved). I'd say Mimosa was closer to that. The best part is that this was opened late into a tasting where everyone [else] was shitfaced, and they quickly forgot about it in the rush to open more and more rare beer. So I simply kept working on the bottle for a good 30 minutes. I would gladly drink this again at a tasting where someone else brings the bottle and lets me have most of it.

Hazy straw body with a lasting fluffy head. Huge citrus aroma, dominantly orange and grapefruit. Slightly spicy and floral, with a little acidity poking through. The palate is similar, very citrus forward, orange flesh and peel, tannic barrel, light spiciness. This is delicious, a smorgasbord of bright citrus flavors. The body is unfortunately quite heavy, and the beer begins to feel somewhat syrupy once it warms, but it's is very enjoyable overall.

750ml bottle dipped in red wax. Bottle # 313/450 shared with friends. Poured into a snifter, the brew appears a hazed golden yellow with a frothy white cap more than a finger strong. A full wall of lace sticks to the glass.

The aroma is bretty and funked that transitions into orange zest and rind. There is a bit of a cheese note coupled with lacto and yogurt. As it warms up, more orange citrus elements come forward with fresh rindy and pulp character accented by a hint of neutral alcohol like vodka. The name of this brew is spot on.

The taste is rindy with fruit, zest and pulp of oranges. The orange inclusion provides a bit of earthy to rindy fruit bitterness mildly like grapefruit but more specifically like orange/tangerine. Quite fruity with the citrus integratin nicely with a mild acidity that is more tart than sour or acidic really.

This is a medium bodied brew with a modest level of carbonation. It is really a fresh, unique and inviting take on the american wild style. I would seriously pursue another bottle of this if the cost of admission wasnt so high and it wasnt as sought after as it is. Really fitting of the name and dangerously drinkable. It wasnt until my glass was 4/5 of empty before I noticed the alcohol inclusion was as high as it was.

Had @ the HF Festival of Farmhouse Ales. Pours a slightly-cloudy golden-peach with a huge, fluffy white head. Fantastic retention and loads of sticky lacing as it falls to a nice cap. The nose starts off with orange peel and is quickly followed up with some light straw and earth. Brett is working wonders here. Some notes of white wine and oak in the background. Aside from orange peel, there’s some other light tropical fruit on the finish. Faint tartness also follows through to the finish after a smidgen of oak and wine. Body is light and über refreshing. Finish has a very subtle tartness along with citrus zest and some earth. Bit of tart cherry. Very crisp and dry. Overall, simply a fantastic beer.

750 ml red wax topped bottle into a few glasses. This was bottled # 313/450. Another big thanks to Stakem for sharing this.

Pours a hazed gold, with a finger of rich and creamy looking bright-white head. This stays robust looking, soaping the sides of the glass with thick foamy lacing. The aroma smells awesome, with orange juice, zesty and earthy Brett notes, crisp wheat, light oak and spicy alcohol all combining here in a way that I wasn’t expecting.

The taste is delicious orange flavor, with a zesty tart bite from the Brett and an equally tart wheat character across the back. The alcohol is very complimentary here to the other flavors, with a warm spiciness that bring it all together. The finish is dry and tannic with a little bit of lingering earthy tartness on the end. The mouthfeel is medium bodied, with a gentle crispness on the tongue and a smooth creaminess that fills out the rest of the mouth. The ABV on this is just incredibly well hid, giving this a ridiculously smooth feel that I can hardly believe is as big as it is. Very well done!

I don’t really know what my expectations for this Hill Farmstead release were going in but this definitely exceeded them. The way the oranges and alcohol came together really does have this feeling like a mimosa while the Brett, wheat and oak add complimentary notes that round this out nicely. I’d love to have this again. It’s definitely one of the best executed beers that I’ve had from them.

Picked this up at the release, bottle number 379/450. Been waiting for this bad boy...

A - The bottle was a slow gusher, pours a nice crystal clear light golden hue with a good one finger creamy white head that leaves good side lacing and a nice creamy light blanket.

S - The orange isnt quite as prominant as I thought it would be, or was led to believe. I'd heard this smelled like orange juice and champagne, which, it does just not too too strong. There are light grapes, barrels. Super inviting though.

T - Okay, so yah...yep, this is a mimosa. Lots of tart, sour oranges. Wasnt expecting this level or sourness, but its delicious. So much like orange juice, with a great champagne type finish and background flavour. There are some nice earthy oak barrel notes, as well as some slightly strongish yeast notes as well. The brett is coming along nicely.

M - Mouthfeel is delicious , tart, lightly sour. Great carbonation. Drinks just like a mimosa. Where is the abv!?!?

O - Overall this is worth every bit of glory this beer gets. Its amazing what Shaun Hill repeatedly puts out. Almost mind meltingly good.
