had a vintage draught pour of this at the 2023 anniversary celebration ... wow! you can tell this beer has been aged but not at all in a bad way - it's just very cohesive and smooth. there is some acidic fruity flavor, mellow funk, and an oaky sweetness hinting at vanilla. perfect level of carbonation and smooth on the palate, it's sort of shocking that a beer can hold up this well.

A - Dark gold color with thin white lacing and light, steady carbonation.
S - Funky, tart, and fruity on the nose with some green apple, white grape, pear.
T - Tart funk, white grape and green apple dominate this beer from start to finish.
M - Thick mouthfeel that's velvety soft and borderline syrupy in texture with no carbonation.
O - For being (7) years old, this beer held up extremely well.

It's not often that I'd gladly pay $10 for 4 oz. of beer, but when I saw this on the tap list yesterday, there was no way I could say no. A wonderful example of what a good brewer can do with quality ingredients, creativity, and patience. Wonderful smell, look and taste. I consider myself lucky to have been able snag a taste.

Poured from the bottle at Hill Farmstead tasting room on May 6, 2016.
Pours a beautiful and clear medium to light amber with very little head.
Lots of yeast sourness in the nose, some sweetness and bread is present as well.
Flavors are incredible, complex and sour. Tartness abounds.
Mouthfeel is excellent and finished so crisp and dry.
Overall, this beer is masterfully crafted and so happy this was available to enjoy from the bottle years after it was initially bottled.
