375ml bottle served into a Cantillon degustation glass.

Appearance: Pours a slightly hazy straw yellow. Fizzy off-white head. An aggressive pour creates only about a 1-finger sized head that dissipates quickly.

Smell: A mash-up of juicy tropical fruits and sourness hit the nose first. Followed by a warm, pleasant woody undertone. Touch of lemon and mustiness. Finishes with a spicy, earthy funk aroma.

Taste: Masterful balance of sweet and sour work in tandem to create one of the most balanced beers I've ever had the pleasure of drinking. The beer is bright, yet packs a slightly mouth puckering quality. Decent amount of funk and mustiness.

Mouthfeel: Medium carbonation pairs up perfectly with a silky smooth medium body.

Overall: This is truly an impressive beer. The first Hill Farmstead I've drank that I actually liked. I thought a few other beers were overrated, but this deserves every bit of praise. Combines the qualities of a saison with characteristics of a gueuze, and it's a lovely match-made-in-heaven.

The wine barrel aging is very slight, and if you're not looking closely enough like I was, you'll miss it.

Hill Farmstead Civil Disobedience from a 12 oz bottle to a small snifter.
Has more clarity than expected but a weak head.
Wild ale here, but not challenging (as many are for me). Very Tart. Fruity (non-specific). Slifght hint of vinegar.

O: excellent for style.

People are getting real lazy with the "Had" function. I'm the first review! Shared by schen9303. 375ml capped bottle into a Hill Farmstead taster.

Pours slightly flat. Very slight white ring that dissipates quickly. Lacing is patchy and web-like with good cling. Beer is a clear, light bronze-orange. Decent but not the best.

Nose is pretty subtle. Nose is citrus, caramel, cane sugar, cake batter, oak and a light, creamy tartness. A great mix of sweet and tart. Mellow though.

Opens pineapple, starfruit, and citrus. Pretty tropical. A light yeasty bitterness mixed with tart oak and citrus. Your typical HF Saison yeastiness at the end. Slightly sweet, cobweb-y, with the lightest bit of funk. Finishes accented and tart with a foamy but ultimately clean aftertaste. Good complexity and great balance. A real nice beer.

Light bodied with moderate to ample carbonation. Prickly, bubbly and lively in the mouth and goes down abrasive and clean. Finishes accented with a spritzy, foamy aftertaste. I like it.

A real nice blended sour Saison from Hill Farmstead but at this point, its expected. CD6 is a nice beer that I think will develop for a while. It should gain carbonation and I hope the flavors evolve a touch. There's a lot to like here and I'm glad I have some to age.

375 mL bottle poured into a snifter. Bottled 5/2013.

Appearance - Hazy deep orange, almost amber. Decent white head. A few surface islands.

Smell - Wine aroma. Strong malty aroma. A little bit acidic. Yeast aroma.

Taste - Very winey. Strong white wine. Malty again, with a bit of sweetness. Tartness builds slowly. Some caramel back there.

Mouthfeel - A little heavy. Malty and tangy. Medium carbonation.

Overall - Greater than the sum of its parts. Not my favorite Civil Disobedience, but damn good nonetheless.
