Served in a snifter

A - It looks like cola when poured. I'll just call this one black. When held to the light, none comes through. It is capped with three inches of dark mocha head that leaves little trace behind after a few minutes.

S - The spices really pop in this version. The aroma is filled with cinnamon, nutmeg, vanilla, and chocolate.

T - The spices stand out in the taste, too. The cinnamon and nutmeg make this taste like a chocolatey Christmas treat. The coffee is noticeable in the finish and aftertaste. The peppers are no where to be found. There is also a rather sweet building of vanilla after a few drinks. It is almost too sweet.

M - Full

O - This is one bourbon barrel beer that I prefer the non barrel aged version of better. The spices are much more distinct in this variant. The sweetness really comes through to almost be a hindrance rather than amplify the taste. I think I'll stick with the regular Mayan Mocha with I very much like.

Pour is black with a small amount of tight brown head. Nose is heavily spiced like a Christmas ale but a bit larger and has some actual malt backbone. The habaneros seem fairly present but the bourbon barrel doesn't have much influence on the nose. A bit of sugary malt sweetness in back. This has a lot going on, really big flavors, the spice isn't overly strong, gives at a little kick on the back of the tongue and through the finish. Tons of Christmas spice to it, again not much bourbon, malts aren't really doing much and a bit of sugary mid palate through the finish. Fairly full body, thins a little in back, well carbonated.

A - Pours a midnight black with a thin tan head. The head dissapates quickly leaving very light lacing.

S - Lots of cinnamon, nutmeg, vanilla, and dark chocolate.

T - Follows the aroma. Lots of dark chocolate, cinnamon, and vanilla. The finish has a light habanero heat and a touch of bourbon.

M - Light bodied with light carbonation. Very smooth drinking with a dry mouthfeel.

O - Not picking up much bourbon or oak in this one. That said, this is a very drinkable and flavorful BA Stout.
