A= poured a very light amber color with nice lacing and about a 1.5 finger head that disappeared quickly.

S= typical Belgian ale with initial citrus smells then yummy smells of of yeast and malt and then finishing with a piney-sage end note.

T= crisp initial citrus taste with a bready middle tone and finishing with pine and hops.

M= light mouthfeel with consistent carbonation

O= good tasting beer. I like the pine finish. Not my favorite from Epic. But it's a solid beer that I will drink again. (502 characters)

22oz bottle, Release #2. Pours clear yellow-gold with a medium creamy white head that retains well and laces the glass.

The aroma is sweet malts and turkey cooking spices (rosemary and sage?) that seem a bit out of place.

The flavor is sweet bready, slightly vegetal malts with a big spice finish (sage and rosemary) and a little mint. The mouthfeel is medium to full bodied with creamy carbonation.

Overall, an interesting concept, but a bit overly spiced and I wasn't really digging those spices in beer. (509 characters)

Poured a gorgeous cloudy orange body with golden highlights and one finger of rich, foamy head. A wonderful looking saison. Scents of strong fruity esters upfront with notes of apricot, citrus, marmalade, a spicy yeast character with notes of white pepper, light clove and limited amounts of lemon zest and safe in the background. Overall impression is of a typical Saison base, rich in esters with lesser spicy phenols playing a good supporting role and just enough of the sage coming through to add some depth. Not a fabulously unique saison, but well executed. Flavor begins with medium sweetness with notes of apricot, white pepper, slight herbal/floral flavors, a light tang and some medium citrus character. Middle continues citrus flavors, along with white pepper, adding a bitter herbal touch that I believe is from sage, and a light touch of lemon zest and floral/herbal hops. Finish is medium-dry with notes of lemon zest, white pepper, some light sage bitterness and a touch of bright citrus. Aftertaste is white pepper, giving way to an herbal bitterness that from past experience I know to be the aftertaste of sage. Overall impression of flavor is of a nice saison, true to style, but with a little depth added by the sage. It could stand to be a more robust part of the overall flavor profile however. Mouthfeel is medium-light bodied with high, effervescent carbonation and a wonderful light acidity keeping it bright and balancing the dry finish. Overall impression of mouthfeel is of a classic saison, true to style, refreshing and well done. Overall this is a very good saison. It has a classic armor and flavor, enhanced somewhat by the sage addition, though it could stand to be more robust. It is aided by a classic mouthfeel that is fantastic. A good saison and quite refreshing. (1,802 characters)

Thanks to jtd1969 for sharing this bottle with me.

A - hazy copper gold with a soft, white head

S - sage through and through

T - sage, mild yeast, herbal, orange peel, earthy

M - medium bodied, crisp, well carbonated

This was delicious. I love herbs in beer. This will be over the top for some, but for me this was fantastic. The yeast and malt laid a perfect foundation to play nice with the sage. I probably couldn't have more than one of these at a time, but I'll definitely have it again. (497 characters)

Release #3; Posting to help it get a score.

Pours a clear orange amber with a lovely thick, firm and long lasting pure white head. Really nice looking.

Nose is all fruity "saged" esters. Sage is really present but well integrated into the other fruit character of the nose. Really pleasant fresh sage, oranges, citrus and spice.

Mouthfeel is medium thin and crisp with nice medium carbonation.

Flavor profile drives this one. Full and rich assertive flavors of oranges and spice in the front palate that leads into a more complex semi-sweet sage/spice/pepper character. Well integrated and nice flavors without any one element just jumping out. I'm guessing that this would be really nice with Indian, Chinese and Thai food. Very interesting and inviting profiles.

Finish is a bit green herbed to me with a nice green pepper/celery bitter tone that is long lasting. Nice effort on this one. (899 characters)

Poured from the bottle into a tulip glass. Release #25.

Uniform body color mostly, with a nice golden glow to it. Slightly opaque and solid looking, a chestnut brown to bronze hue in the middle, and a good middle column of carbonation, although hard to see through the thickness. Head is classic white, slightly creamy, moderate retention and some good soapy staying power, slightly big bubbled too. A very very good looking saison.

Excellent bouquet. Lots of classic farmhouse notes that are noticeable but not overboard, and a great subtle earth green and spicy sweetness. Hints of chamomile and garden herbs, thyme, sage, even an almost lemon sorrel like quality also. Some clove like hints, even some brown dry spiced warmth comes off this also. A sweet earthy delight, great stuff so far.

Palate manages nicely. There's a bit of a shock as the body comes off a little slightly wet at first, but the flavors still manage to transpire. Mid palate brings some good sweetness of thyme and sage, but also some slight sweet mint qualities too. The aftertaste is a big shocker, lingering earth and soft pepper dryness with wonderful matching sage growth and sweetness. Even with a slightly weaker than expected mouthfeel, the quality is very impressive and noticeable.

It's a very unique flavor profile, and this is going to be very appealing to many. It however doesn't have all the great parts of a saison I enjoy immensely, but is still a very worthy brew, and I love it's unique character. Not the saison I want or desire, but one that everyone should try absolutely. (1,587 characters)

Picked up tonight at Bier Thirty in Bown.... Poured into my small Cigar City snifter.... Pours a hazy light orange with a short lasting white head that leaves only a little lacing.

The nose is herbaceous... hard to pick any one herb out... a predominant lemon element is the bigger player.

On the palate, the herbs play a much larger role.... a significant amount of sage.... and what I think of rosemary comes out... Rosemary always makes me think of antiseptic qualities... again, a lemony note reminds us that this is a saison... light pale malts tie this brew together... but it still finishes fairly dry.

Body seems a touch heavy for the style.... carbonation is also maybe a little light.
